Catherine and Thor Bersted, owners of Lavender Falls Farm say trying to meet customer demand can be challenging. The Bersteds previously dried more than 50% of their lavender crop, but have shifted to produce more lavender oil and bud for their culinary products. “And we’re realizing what the supply and demand is,” says Catherine. “When we first opened our cafe, I had to totally redo the way that I was making the lavender iced tea, because people did not know that you could consume lavender… and now after our second year, people are wanting to buy our lavender iced tea. So it is adapting and it is changing.”
