Second Grotto on tap as Pasta Express shifts locations

The Grotto is working to open a second restaurant at Pasta Express’ current digs at Fox Grape Plaza, as the latter moves into a larger space at the development.

C.J. Miles, co-owner of the Pasta Express location, 3250 E. Battlefield Road, said he’s targeting a Feb. 9 move-in date to the end cap of the building, a former Verizon Wireless corporate store.

He said the larger space - 4,000 square feet compared to his current 3,300 - would allow for more dining space, as well as meeting space for business and community meetings, such as for Glendale and Springfield Catholic high schools. He said he’s also working to put in drive-thru service at the pasta eatery, but plans haven’t been solidified.

Miles purchased the restaurant about six years ago from concept franchisor Matt Krupa and has worked at the spot for about 10 years, he said. The restaurant currently employs around 13, and Miles said he’d be looking to hire additional workers.

Mark Coleman, who owns The Grotto at 301 E. Battlefield Road in Battlefield Plaza, said his second location at Fox Grape Plaza marks the end of a two-year search for a spot on the east side.

“It’s always about trying to find the right space with the right area,” Coleman said, pointing to heavy traffic at Fox Grape Plaza near Highway 65, a nearby movie theater and several neighborhoods.

He said the restaurant, which he plans to open by the end of April, would employ 25, bringing his employee count up to 50. Coleman signed a five-year lease for undisclosed terms at the center with Fox Grape Plaza LLC.[[In-content Ad]]
