Plans for a second Springfield Einstein Bros. Bagels store are coming to fruition ahead of schedule, with a new location in construction just south of James River Freeway on Campbell Avenue.
When RT Development LLC - originally comprising Rita Baron of Baron Design & Associates LLC, Terry Reynolds of C. Arch Bay Co., and restaurant and nightclub owners Paul Sundy and Jay Hickman - opened its first Einstein Bros. franchise July 13 at 1933 S. National Ave., it also made clear plans to open three more stores by 2013.
Now, the ownership group - comprising only Baron and Reynolds - is in the process of opening a second location slightly ahead of schedule at a retail center at 4420 S. Campbell Ave.
The property is owned by White Shirts LLC, a commercial property developer and lessor operated by Andy Kuntz, president of Andy's Frozen Custard, according to the
Greene County assessor's office and a Missouri Secretary of State
filing. The retail center also is home to an Andy's location.
Baron said South Campbell was chosen because its location is convenient for people from Springfield, Republic, Battlefield and Nixa.
"I think it's a perfect location," she added.
Baron said the 3,200-square-foot bagel shop is slated for an opening date of mid-June. But before then, RT Development will be recruiting 25 employees for the location.
She was unsure on the name of the contractor and construction costs, referring those questions to Kuntz, who could not be reached for comment by deadline. Kansas City-based Hufft Projects is working on the exterior architecture, while Baron's own Baron Design & Associates LLC is doing the design work for the infill.
She said RT Development already is in the process of looking for a third spot, possibly on Battlefield Road.
