Recipe: Partridge and a Pear Cookies

Ingredients

  • 1 1/2 stick butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 t. vanilla extract
     
  • 1 t. almond extract
  • 1/2 cup sugar
  • 2 cups flour
  • 1/2 t. baking soda
     
  • 1/2 t. salt
  • 3/4 t. cinnamon
  • 1/4 t. nutmeg
  • 1 1/3 cup (one bag) brickle bits
  • 1 cup diced pear

On the first day of Christmas, my true love gave to me . . . a pear cookie that melts in the mouth! These cookies are crunchy and soft at the same time, with a subtle taste of pear and a beautiful spice flavor that will also make your house smell like the season should. They are just part of our Twelve Days of Christmas Cookie series!

Foodie Byte: You can use fresh or canned pears for this recipe. If using canned, rinse and allow to dry before using.

Preparation

  1. Preheat oven to 350 degrees.
  2. Beat the butter and two sugars together.
  3. Add egg and flavorings.
  4. Add dry ingredients.
  5. Stir in brickle bits and pears, just until mixed.
  6. Drop a teaspoon or so of dough per cookie onto a cookie sheet.
  7. Bake for 12-15 minutes.
