Recipe: Blueberry Bread with Lemon Glaze

Preparation

1. Preheat oven to 325°F.
2. Butter or spray 2 regular-size loaf pans (approximately 9”x4 ½”) and line with parchment.
3. Using an electric mixer, cream butter and 2 cups sugar until light and fluffy.
4. Add eggs, one at a time, until fully blended.
5. Add lemon zest and mix until blended.
6. In a separate bowl, combine flour, baking powder and salt.
7. Add dry ingredients to butter mixture, alternating with milk, until fully blended.
8. Fold in blueberries; pour batter into prepared pans.
9. Bake uncovered for 60 to 75 minutes, or until golden brown on top and toothpick inserted in center comes out clean.
10. Meanwhile, combine confectioner’s sugar, ? cup sugar and lemon juice in bowl and whisk to blend.
11. Remove loaves from pans, drizzle generously with lemon glaze.
