After debuting last year in St. James as a food truck, Therefore, Pizza LLC relocated last fall to Springfield. Owner and sole employee Alex Giger launched a brick-and-mortar space for the pizza business Feb. 25, sharing a small portion of the 2,000-square-foot shop operated by Prairie Pie LLC. Giger said he connected with Prairie Pie co-owner Eleanor Taylor at 307 S. Jefferson Ave. through mutual friends, and she agreed to let him use the shop’s pizza oven left after Vito’s Kitchen vacated the space. He said relocation costs were around $1,000, declining to disclose lease terms with Taylor. Giger said he’s worked 12 years in the restaurant industry, most recently at St. James-based Just a Taste before starting Therefore, Pizza. The pizzeria serves whole pies and by the slice. Pizzas range $20-$30 a pie, while slices are $4-$6. Giger said he still owns the trailer but has no current plans to regularly sell pizza from it. However, expanding pizzeria hours is under discussion.

The Garden Exchange
Two years after launching Aurora-based The Garden Exchange, which sells coffee, plants, flowers and vegetables, husband-and-wife owners Kelby and Hannah Rader added a second location Dec. 1 with an event center. Kelby Rader said the 2,000-square-foot venue at 2029 S. Elliott Ave. includes 1,300 square feet of event space for up to 75 people. The building also includes a drive-thru for staff to sell the venture’s house-brewed coffee. The Garden Exchange maintains its coffee and floral shop at 22 E. Olive St., which opened in 2020. Rader said startup costs for the event center were $50,000, declining to disclose the building purchase price. The drive-thru temporarily closed April 13 for renovations to add deli and bakery service in the building. However, event rentals, which are $50 per hour, will continue during renovation work. Rader said the rental includes a host to provide coffee and on-site assistance.

Ozarks Community Health Center
Hermitage-based Ozarks Community Health Center moved its Urbana clinic Jan. 5 to a newly constructed building at 406 S. Dallas St. The clinic, which has operated in the Dallas County town for seven years, was located at 111 N. Main St. OCHC handled most of the construction work in-house for the $1.5 million clinic, said CEO Scott Crouch. The new 8,200-square-foot facility has visibility from Highway 65 and room for growth, Crouch said. Clinic manager Sethanne Higginbotham leads the 18-employee staff. Services at the clinic include physical exams, X-rays, laboratory services, immunizations and behavioral health counseling. Additionally, Bolivar-based Stephens Pharmacy at CMH, owned and operated by Citizens Memorial Health Foundation, offers on-site telepharmacy services. Aside from its Urbana clinic, OCHC also operates separate medical, behavioral health and dental offices in Hermitage, as well as dental clinics in Greenfield and Bolivar.
