The restaurant is based on the concept of mixing healthy eating and bodybuilding, with reduced fat and low-carbohydrate menu options such as turkey chili, grilled chicken wraps, whole wheat pasta, protein shakes and fruit smoothies. Most entrees range between $8 and $10, Rieta said, noting the restaurant’s capabilities to meet specific dietary needs such as gluten-free dishes. Muscle Maker founder Rod Silva started the health-conscious concept in 1995 out of his protein smoothie and supplements store in New Jersey. He started franchising in 2007, and there are locations across 10 states, mostly along the east coast, according to its website. Qualifying franchisees have a minimum net worth of $250,000 and liquid assets of $100,000. Andy Anderson on Nov. 1 opened CPR Services of the Ozarks at 1237 E. Republic Road, Ste. B. Andy Anderson, a registered nurse, has worked for Citizens Memorial Hospital in Bolivar for 14 years, and the majority of that time was spent teaching CPR courses. The Andersons, the only instructors operating the 15-person classroom, offer American Heart Association classes in first aid, CPR and automatic external defibrillator training. Classes start at $10 for basic awareness, noncertification courses and go up to $65 for all-inclusive CPR, AED training for a two-year certification. On-site classes are available to groups, organizations and corporations with a minimum of three people. The Andersons personally financed their $10,000 startup cost, which consisted of training videos and equipment and the rights to the American Heart Association training videos. CPRServicesOfTheOzarks.comMigulito’s Wrap and Roll CafeMichael Taylor opened Migulito’s Wrap and Roll Cafe on Nov. 27 at 320 Park Central West. Taylor, who started Migulito’s about a year ago on the south side at 3650 S. Campbell Ave., runs the 3,000-square-foot cafe with five part-time employees. Taylor has 10 years of small-business ownership experience through his Kalispell, Mont.-based construction company Stonehaven Construction. Migulito’s cafe serves multicultural styles of food, such as Thai, Mexican and Greek, in wraps, bowls, salads, gyros and burritos that average $8 to $10 per dish, Taylor said, noting vegetarian, vegan and gluten-free options are available. On the lighter side, Taylor said the menu offers $4 hummus and pita, and $3 fish or steak tacos. Through personal financing and funding from investor John Short, Taylor started the business with $15,000 to cover liquor and business licenses and kitchen equipment.
