The 86,000-square-foot store, which cost about $17 million to build and employs 527, offers natural and organic foods, a deli, freshly prepared hot and cold food bars, in-house chefs and dietitians, a pharmacy, wine and spirits store, floral department, catering and Hy-Vee gasoline. Eric Stanley opened RecordIt2ProveIt LLC on Aug. 1. Operating from home, Stanley photographs and records the inventory of a residence or business for insurance purposes in the case of a burglary. After the recordings and photographs are taken, Stanley said customers receive copies for their personal records. Stanley has worked 25 years in video production, editing for 20 years and as a partner in Coolfire Media in St. Louis. RecordIt2ProveIt charges by square footage of the home or business.
