Longtime Springfield restaurateur Steve Heil opened a Florentina’s Ristorante Italiano franchise on Jan. 21 in Battlefield Marketplace, 900 E. Battlefield Road – roughly a week after closing his Springfield Pasta Co. at 4109 S. National Ave. Heil, who previously operated as a Pasta House Co. franchisee for 25 years and plans to bring Cantina Laredo to Springfield this summer, bought the rights to open the Florentina’s franchise from Paul and Ann Bluto’s Branson company ITEC Attractions Inc. General Manager Todd Kuhnert leads the staff of 50, mostly former Springfield Pasta Co. staff, though he said 15 new staff members were added for the more upscale Florentina’s concept. The lunch and dinner menus were created by Chef Ron Kalenuik with prices ranging from $10 to $20 and a wine list featuring more than two dozen varieties. In a lease with Magers Enterprises, Florentina’s occupies 6,900 square feet in space previously occupied by Quincy Magoo’s. Mo’ Beef
Aurora transplant Don Fairchild opened Chicago-style Italian beef restaurant Mo’ Beef on Jan. 9 at 405 W. Walnut St. Fairchild said he got the business idea while studying at the Le Cordon Bleu College of Culinary Arts in Chicago, where he sampled the local cuisine. Tony Johnson manages Mo’ Beef and brings 20 years of restaurant experience, most recently working at Fusion Bar and Grill on Kansas Expressway. Fairchild said sandwiches range from $3 to $7 at the restaurant, which seats 12. Through Serenity Entertainment LLC, Fairchild bought the 1,600-square-foot building, but declined to disclose acquisition and startup costs. Red Rock Coffee Co.
Brandon and Alicia Adamson opened Red Rock Coffee Co. on Dec. 27 at 319 S. Main St., Ste. T, in Rogersville. The husband-and-wife owners offer coffee, espresso and smoothie drinks as well as breakfast and lunch sandwiches and flatbreads ranging in price from $1.65 to $6.25. Brandon Adamson, a partner in Mansfield-based Concrete Stain and Supply LLC, said the improving “up and out” state of the economy provided the right climate to open Red Rock Coffee.
