Arianne Hubach opened Brown Egg LLC on Oct. 5 at 607 E. Madison St., Ste. 112. The 2,180-square-foot café and coffeehouse is Hubach’s first business after working 18 years in restaurants, most recently as a training general manager with Panera Bread Co. Hubach leases the property from MJW Leasing but declined to disclose terms. Brown Egg employs 42, mostly part-timers, and offers breakfast, lunch and dinner, including pot pie, biscuits and gravy, pot roast and breakfast burrito meals. The menu also includes baked goods, and coffee and espresso drinks. Breakfast prices are in the $3.50 range, while lunch and dinner are roughly $5.50; coffee drinks are $3.50, Hubach says. Gigi’s Cupcakes USAFranchisee
Kim Wheeler opened the 42nd Gigi’s Cupcakes USA store Sept. 23 at 900 E. Battlefield Road, Ste. 124, in Battlefield Market Place. Operating under Branson-based Let Them Eat Cake LLC, Wheeler’s 1,750-square-foot shop sells more than 10 cupcake flavors daily, including seasonal flavors, for about $3 apiece. Wheeler, who has worked in marketing for 25 years, including stints at FedEx and Glennon & Co., declined to disclose startup costs. According to Gigi’s Web site, startup costs are typically between $175,000 and $200,000, including a $35,000 franchise fee. Royalties are 4.5 percent of gross sales, and a 2 percent marketing fee applies. The Springfield shop is the first Gigi’s to open in Missouri. The three-year-old chain founded by Gigi Butler in Nashville, Tenn., sells roughly 10 million cupcakes a year and plans to open its 50th store by year’s end. Einstein Bros. BagelsRT Development LLC opened its second Einstein Bros. Bagels store Oct. 4 at 4430 S. Campbell Ave. The franchisee, operated by
Terry Reynolds of C. Arch Bay Co. and
Rita Baron of Baron Design & Associates LLC, introduced the national chain last year with a 1933 S. National Ave. store. The new 3,200-square-foot shop cost about $580,000 to build. South Campbell General Manager Adam Goodall said the store employs 20. Einstein Bros. Bagels offers breakfast meals in the $4 to $6 range and lunch between $6 and $8; a dozen bagels cost $10. The Colorado-based franchise charges a $35,000 franchisee fee per store and royalties of 5 percent of gross sales.
