Harter House

Barbara Bettlach and Kathy and Randy Richards opened the fourth Harter House grocery store Feb. 20. The 24,000-square-foot location at 1625 S. Eastgate Ave. is the first grocery retailer in the area to offer dry-aged beef, according to Operating Manager Randy Richards. The dry-aging process has been used for years in upscale restaurants to produce more tender beef. “We call it succulent,” Richards said. Harter House was founded by Jerry and Barbara Bettlach in 1973 as a butcher shop at 629 W. Sunshine St. Now, Barbara Bettlach and her family members individually own and operate two Springfield stores and one each in Kimberling City and Strafford. A store will open in Hollister in the summer. Hours: 7 a.m.–10 p.m. Monday through Saturday and 7 a.m.–9 p.m. Sunday. Phone: (417) 883-1650.
