The food code would only allow seven days. *Smoothie blenders are washed one time a day. Must wash, rinse and sanitize food contact surfaces in contact with potentially hazardous foods every four hours once in use. *Gasket stuck on rim of ice cream hopper. Cassil's Coffee Café, 2925 W. Republic Road; Discussed air vents becoming dusty and drain under preparation sink in back room that is plugged. Critical violations found: 1. *Utensils not being washed, rinsed, and sanitized every four hours. (Utensils must be washed, rinsed and sanitized every four hours or at least changed out at least every four hours). Noncritical violations found: 1.
Churchill Memories, 901 S. National; Critical violations found: 4. *Skim milk in self-service pitcher 60 F at 3:40 p.m. - container has unpleasant odor. Removed from service. *Spatula used to hold back froth is stored in pitcher of unclean water and is wiped on dirty towel before using. Code does not allow utensils used in contact with potentially hazardous foods (milk) to be stored in water. Discussed options for both locations. *Drain line on waste tank has come unhooked so water draining from sinks goes on the floor. Fast-N-Friendly Deli, 1451 N. Kansas; Must write up a policy for time as a control to be documented. Notebook must document date and time food got to 140 F or above - write time made on bottom of wrapped product. Discussed not pulling out too much uncooked product and letting it sit too long out of refrigeration. Critical violations found: 1. *Corn dogs at 133 F, chili dogs at 113 F, hamburgers at 137 F. (Potentially hazardous foods must hold hot at 140 F or above. Discarded corn dogs immediately, hamburgers and chili dogs had been made within the hour, advised manager to discard at 2 p.m. if they were not gone by then. Chili was put on at 9:30 a.m. and temperature checked at 11:15 a.m. Do not use crock pot to reheat foods - must be reheated to 165 F within two hours if going to be hot-held. *No sanitizer detected in sanitizer container.
