Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

Critical violations found: 7. *Employees did not wash hands after putting on hair restraint or after blowing nose before putting on gloves (Hands must be washed before putting on gloves especially after touching face, hair, blowing nose). *Ribs at 130 F, roasted chicken at 135 F (Potentially hazardous foods must be reheated to 165 F) *Front refrigerator at 67 F – vegetables in it this morning (Refrigeration must hold 45 F or below). *Fried chicken and roasted chicken not being date marked (Potentially hazardous foods kept longer than 24 hours must be marked with expiration date). *Soda nozzles moldy, utensils put away with food debris on them. (Wash, rinse, and sanitize). *Slicers not being broken down and washed, rinsed, and sanitized every four hours (If in contact with potentially hazardous foods equipment or utensils must be washed, rinsed, and sanitized at least every four hours if setting at room temperature). *Dishwasher not sanitizing at appropriate temperatures (Dishwasher must ensure plate surface reaches 160 F to sanitize). Noncritical violations found: 6.

Outland/Highlife, 322 South Avenue; Reinspection. Corrections: Soda gun appears clean, drain leaks repaired on four-vat sink and mop sink. Critical violations found: 1. *Drain leak on men’s restroom hand sink. Noncritical violations found: 0.

Panera Bread, 3837 S. Campbell;

Discussed importance of having test strips and using them frequently. Dish-machine maintenance person is not responsible for noticing

malfunction of machine. Management should be testing routinely to notice problems. Critical violations found: 1. *Dish machine was not sanitizing effectively. (Have machine repaired to properly sanitize with 50-100 ppm bleach water.) Corrected on site. Noncritical violations found: 2.
