(Wash, rinse, and sanitize). *Slicers not being broken down and washed, rinsed, and sanitized every four hours (If in contact with potentially hazardous foods equipment or utensils must be washed, rinsed, and sanitized at least every four hours if setting at room temperature). *Dishwasher not sanitizing at appropriate temperatures (Dishwasher must ensure plate surface reaches 160 F to sanitize).
