Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

Arby’s, 2225 S. Campbell; reinspection; Correction: market fresh deli refrigerator running at 38 F–40 F. Critical violations found: 0. Nonritical violations found: 0.

Sunshine; Critical violations found: 5. *Kitchen employee rinsed hands at the two-vat sink and wiped them on towel and went back to work (Must use hand sink, soap and paper towels.) *Cold food is not maintaining 41 F or less when the imitation crab thawing in standing water is 60 F–80 F. Six packages discarded. *Cardboard used to line metal shelves, some clean utensils stored on the cardboard. *Dirty dishes and food particles are on clean side of dishwasher. *Mouse droppings on top of cans in dry storage area, droppings in open box of ginger powder (discarded) and droppings in box of unopened bags of pasta (discarded). All can goods washed and sanitized by kitchen employees before end of inspection. Noncritical violations found: 12.

Century Buffet, 210 E. Sunshine; reinspection: corrections made: Nothing thawing out of refrigeration; went over hand washing basics; all sinks equipped with soap and paper towels; cardboard removed from shelves; education given to dish washing employee; and many traps and glue boards in place, inspected storage room for evidence of mice. Discussed with owner filling in gap between building and inside wall. Critical violations found: 0. Noncritical violations found: 6.

Cielito Lindo, 3530 S. Campbell; Critical violations found: 7. *Raw chicken for fajitas on cold table behind pico de gallo. Cook uses tongs to transfer chicken over ready to eat food – potential for cross contamination. *Refried beans cooling since morning in the walk-in are still 60 F at 3 p.m. Reviewed times and temperatures required for cooling. *Fajita meat cooked ahead for lunch rush and left on table at room temperature, reheated on grill per customer order. At 2:30 p.m. the chicken was 80 F. Both pans of meat discarded. The only way food can be removed from temperature control is to keep a log, and all food left after four hours discarded. *Sanitizer in wipe cloth bucket greater than 200 ppm chlorine. *Dish washer contains lots of food particles, “clean” dish table dirty. *Hand-sink drain is leaking in kitchen – repair person was on site before end of inspection. *Raid spray in kitchen, unapproved fly and roach spray, must remove. Noncritical violations found: 9.

Cielito Lindo, 3530 S. Campbell; reinspection; Critical items from Sept. 19 corrected: Hand-sink drain repaired; raw chicken has been relocated so all raw meat is in separate row; cans of Raid have been removed; using sticky notes to document time fajita meat is taken off grill, discarded after four hours if not served (none made at this time); beans made yesterday cooled in ice bath and then put in pans uncovered in walk-in, temperature 40 degrees; inside of dish washer clean, clean drain table; sanitizer made up this morning slightly less than 50 ppm – told to change often (at least every four hours) or when it looks cloudy. Most noncritical violations also have been corrected, still working on two. Will follow-up with inspection again in two to four weeks. Gave extensive hand out in Spanish explaining food safety requirements. Critical violations found: 0. Noncritical violations found: 2.
