Permit reissued at 9 a.m. Advised owner that following requirements would have to be done to reopen: Documentation of cook and cool-down temperatures kept for cooked chicken and smoked pork. Lots of utensils not cleaned appropriately; observed them washed, rinsed, and sanitized before reissuing permit. Discussed proper hand washing and observed employees wash hands. Rice will be held at 140 F or above instead of attempting to cool down. Discussed covering any open containers of food out on counters overnight. Advised owner that will be doing spot checks once a week until assured that problems have been corrected. No violations found.
