Critical violations found: 1. *Hose attached to hose bibb under three-vat sink without a back flow prevention device. They had installed a Watts No. 8 back-flow preventer, but it leaked badly. (Must install the proper back flow prevention device, such as a Watts N9-CD.). Noncritical violations found: 1.

Ziggies Cafe West, 1324 W. Kearney; Critical violations found: 4. *Raw beef and chicken stored above ready-to-eat foods. Requires raw food to be stored below ready-to-eat food. Repeat violation, corrected. *Chicken breasts at 129 F in warmer at 10:40 a.m. Chicken was just cooked and placed in warmer, and temperature of cooked chicken was not taken. Requires raw poultry to be cooked to at least 165F. Corrected by reheating chicken to 168 F. *Raw eggs at 80 F by grill. Requires potentially hazardous food to be cold held at 41 F or below. Corrected by discarding eggs and storing eggs in cooler and in container on ice. As long as temperature is maintained, can use container on ice. *Employee’s cough medicine stored on plates and above food. No evidence of leaking or spillage. Requires medicines to be stored separately in manner that cannot contaminate food or food-contact surfaces. Corrected. Noncritical violations found: 6.

County Restaurant Health Inspections
