Blimpie’s Subs & Salads; 901 S. National Ave.; Critical violations found: 1. *Sanitizing solution weak. Corrected at 50-100 ppm chlorine solution. Noncritical violations found: 0.
Breadeaux Pisa; 2810 E. Battlefield; Critical violations found: 3. *Dishwasher sanitizer weak. Corrected at 50-100 ppm chlorine. *Soda nozzles not clean. Corrected. *No hot water in customer restrooms. (Must maintain during peak demand.) Noncritical violations found: 4.
CBC Cafeteria; 3000 N. Grant Ave.; Critical violations found: 3. *Ham 48 F, sour cream 50 F and cooked rice 50 F on buffet. (Requires cold-holding of potentially hazardous food at 41 F or below.) Corrected by discarding. Discussed performance of units and repair options. *Can opener not clean. (Requires can openers to be washed, rinsed and sanitized at least every four hours when in use.) Corrected. *Heat-sanitizing dish machine not reaching 160 F on surface of equipment. Until corrected, employees are washing dishes in machine and then dipping into 200 ppm quaternary ammonia sanitizer. Noncritical violations found: 6.
