Listed here are the restaurant health inspections conducted by the Spring?eld-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Spring?eld-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and speci?c critical violations are listed. *Denotes a critical violation.

Dairy Queen; 1411 W. Kearney St.; Critical violations found: 5. *Evidence of employee eating in kitchen observed. (Employees must eat in designated area only to prevent contamination of food and food contact surfaces.) Corrected by education. *Grilled chicken held at 47 F and ranch dressing held at 48 F. (Potentially hazardous foods must be held at 41 F or below.) *Spoon on clean storage shelving not clean. (Food contact surfaces must clean to sight and touch.) Spoon washed, rinsed and sanitized. *Spray bottle of cleaner not labeled. (Label working containers of toxic materials with common name.) La Quinta; 2535 S. Campbell; Reinspection. Repeat critical violations can result in suspension of permit to operate. Critical violations found: 2. *Not all potentially hazardous foods are held at 41 F or less: waffle mix in bulk dispenser is held at room temperature and measured 57 F. *Not all potentially hazardous foods are held at 41 F or less: individual cream cheese is 69 F. Merle’s Hot Dogs & Sweet Susie’s Sweets; 319 E. Walnut St.; Provided information on air gap devices. Susie stated she wanted to simply remove the hose since they didn’t use it anyway and it was just in the way. I left the “Safe Food, Healthy Customers” Handbook for food workers. I will follow up in two weeks. Critical violations found: 1. *Potentially hazardous foods not held at 45 F or lower: coleslaw is at 55 F at the front make station. Noncritical violations found: 2.

Mille’s Turn of the Century Café; 313 S. Jefferson Ave.; Critical violations found: 2. *Onion soup was 135 F in the hold hot unit. (Potentially hazardous foods must be hot held at 140 F or above.) *Meat slicer is not clean. (Wash, rinse, sanitize and air dry.) Noncritical violations found: 2.

Patton Alley Pub; 313 S. Patton Ave.; Reinspection. Critical violations documented on 5/23/08 have been corrected. Critical violations found: 0. Noncritical violations found: 4.

Riad; 305 E. Park Central Square; Will follow up with education assistance. Critical violations found: 9. *The person in charge cannot demonstrate knowledge to answer the inspector’s questions regarding proper dishware sanitation, cooking temperatures, holding temperatures, use-by dates, etc. *Employee not washing hands properly when washing them with disposable gloves on. *Ready-to-eat lasagna has no date mark. (A use-by date is required.) *Employee using bare hand contact with ready-to-eat food when slicing lemons for drinks without gloves. *Alfredo sauce (containing Half & Half) was not properly reheated for hot holding when it was 94 F. (Has to be hot held at 140 F.) *Ice machine is not clean. (Wash & sanitize.) *Bar nozzle is not clean. (Wash & sanitize.) *Dish wash machine tested 0 ppm sanitizer and bucket was empty. (Ammonia solution of 200 ppm according to label is required.) *Sanitizer solution for use at cook station was too strong when it tested 400 ppm ammonia. (Label requires 200 ppm for proper surface sanitizing.) Noncritical violations found: 5.

Riad; 305 E. Park Central Square; Reinspection. All critical violations documented on 5/27/08 have been corrected. Safe Food, Healthy Customers booklets were left for employees. Critical violations found: 0. Noncritical violations found: 1.

Rivals Casual Grille; 3662 S. Glenstone Ave.; Critical violations found: 0. Noncritical violations found: 2.

Sakura Japanese; 3230 S. National; Critical violations found: 2. *Employee was using bare hands to cut lemons for drinks. (Utilize gloves when preparing this ready-to-eat food item.) Corrected at time of inspection verbally. *Cutting board is deeply grooved and no longer smooth and easily cleanable. (Replace this cutting board to provide a smooth and easily cleanable food contact surface.) Corrected at time of inspection. Noncritical violations found: 5.

Scramblers Diner; 501 W. Chestnut Expwy.; Reinspection. Previous critical items corrected. Critical violations found: 0. Noncritical violations found: 0.

Skybox Grille & Lounge; 1271 E. Montclair St.; Reinspection. Corrections: Slicer appears clean; inside ice machine and shield appear clean; all ready to eat foods held within appropriate shelf-life; all criticals corrected at this time. Critical violations found: 0. Noncritical violations found: 0.

Village Inn – Campbell; 4222 S. Campbell; Discussed using time as a control for eggs at the egg station and possible in-service education at the manager’s request. Critical violations found: 2. *Employee using bare hands to plate food for presentation. (Utilize gloves or utensils to eliminate bare-hand contact with ready-to-eat food items.) Corrected at time of inspection verbally. *Potentially hazardous, ready-to-eat melons, soup and gravy in walk-in cooler were not properly date labeled with a seven-day discard date. Corrected at time of inspection. Noncritical violations found: 7.

Ziggie’s Café; 2222 S. Campbell; Critical violations found: 6. *Not all employees are washing hands when needed: employee observed breading chicken with gloves, discarded gloves and put on new ones to work cook line without washing hands; employee involved in duties outside kitchen returned and put on gloves without washing hands. *Open drink cups in kitchen; observed employee drinking from open cup while prepping food. *Not all potentially hazardous foods are held at 41 F or less when creamers stating “keep refrigerated” are held on tables. Removed. *Not all potentially hazardous foods are held at 41 F or less when fish sauce was thawed in kitchen hand sink and was room temperature. Discarded two pouches. *When taken apart, slicer was found to have build-up of dried-on meat; had not been used today. Removed and cleaned. *Several chemical bottles stored above containers of food. Moved. Noncritical violations found: 7.
