Critical violations found: 1. *Potentially hazardous, ready-to-eat sausage patties in walk-in cooler were not properly date-labeled. Label with a seven-day discard date. Ben’s Carriage House Sandwich Shop, 1772 S. Glenstone; Critical violations found: 6. *Raw chicken stored above vegetables (corrected, chicken stored in designated area below other products). *Not clean under shake mixer head. Corrected. *Meat slicer not clean (must clean within four hours of use). Can opener not clean (clean and sanitize). *Cook’s hand sink has leak in waste line (must be maintained in proper repair). *Sanitizing solution too strong at 200ppm. Corrected at 50-100 ppm chlorine solution. Noncritical violations found: 9.

(Potentially hazardous raw foods should not be stored above ready to eat foods. Possible cross-contamination. Corrected immediately). Noncritical violations found: 2.

Requires potentially hazardous food to be held at 41 degrees F unless time is used as control (requires written policy, documentation of temperature and time, and destruction of food after out of temperature control, no more than 4 hours total). China Star, 1444 E. Republic; Discussed importance of hot- and cold-holding temperatures during a lunch rush. Critical violations found: 0. Noncritical violations found: 2.
Cici’s Pizza, 2656 N. Kansas Expressway; Need to add documentation of time as control. Inspection done due to complaint – found no problems that were addressed in complaint. Critical violations found: 3. *Small refrigerator at 50 degrees F on salad buffet (potentially hazardous foods must be held at 45 degrees F or below; moved pasta salad and dressings to proper refrigeration). *Lids and utensils on bottom drain rack not clean (utensils must be clean to sight and touch). *Men’s restroom hand sink does not have hot water (must have adequate hot water for demand). Noncritical violations found: 2.
Cici’s Pizza, 2656 N. Kansas; Reinspection: All critical violations corrected, small refrigerator cold holding at 39 degrees F, men’s restroom has ample hot water at hand sink, lids and utensils have been cleaned and sanitized and moved to prevent possible splash and contamination. No violations found.
