Bandana’s Bar-B-Que, 900 E. Battlefield Road; Discussed proper cooling methods and importance of monitoring temperatures during this process. Critical violations found: 1. *Potentially hazardous chicken, ribs, pork roast, and beef roast were not cooled below 70 F within two hours, and below 40 F in the remaining four hours. Corrected by reheating to 165 F. Noncritical violations found: 2.
Bandana’s Bar-B-Que, 900 E. Battlefield Road; Reinspection: Visited site at 5 p.m. to note that all chicken halves that were cooked to 140 F at 3 p.m. were now at 40 F. Also, the beef roasts and pork roast were noted at 140F after being reheated to 165F. Visited site at 7 p.m. to note that pork and beef roasts were at 68 F and 66 F. The first part of the cooling process is working correctly, however continued monitoring will be needed to be sure that the roasts continue to cool below 40 F in the next four hours. No violations found.
