City Restaurant Health Inspections

Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

June 25-29, 2007

Arby’s, 1833 W. Republic Road; Discussed sanitizer test strips. Critical violations found: 1. *Potentially hazardous, ready-to-eat corned beef in the walk-in cooler was not properly date labeled with a seven-day discard date. Corrected at time of inspection. Noncritical violations found: 1.

Autumn Corners, 1414 W. Edgewood; Critical violations found: 2. *Employee drinking from open cup. (Employee drinks must be covered with lid and straw.) Discarded drink immediately. *Sanitizer at 200 ppm. (Chlorine sanitizer must be at 50-100 ppm.) Corrected immediately. Noncritical violations found: 0.

Braums, 2617 W. Republic Road; Discussed chemical bottle storage location. Critical violations found: 0. Noncritical violations found: 4.

China Castle, 1231 W. Kearney St.; Critical violations found: 1. *One cutting board deeply grooved. Board discarded; other boards smooth, easily cleanable. Noncritical violations found: 6.

China King, 2123 W. Republic Road; Walk-in cooler not adequate for storage needs. (Must add coolers or cook smaller batches to ensure foods are cooled and held at proper cold-holding temperatures.) Advised owner that reinspection will be done tomorrow; if substantial corrections are not made, food service permit will be suspended. Critical violations found: 7. *Employees unable to communicate with inspector upon arrival, no person in charge. (Owner arrived shortly after inspector began inspection.) *Employees not washing hands after contamination. (Must wash hands after eating, touching raw meat or eggs and before touching foods.) Corrected immediately. *Ground pork and raw eggs stored above bok choy. (Raw meat products should never be stored above ready-to-eat products.) *Cooked noodles not cooled properly at 70 F at 2:40 p.m. after being cooked at 11:30 a.m. (Potentially hazardous foods must be cooled from 140 F to 70 F within two hours, and from 70 F to 41 F within two hours.) Discarded immediately. *Garlic in oil at 68 F on cart. (Potentially hazardous foods must be refrigerated at 41 F or below.) Discarded immediately. *Utensils stored unclean and on unclean surfaces. (Wash, rinse and sanitize.) Corrected immediately. *Flies throughout kitchen. (Use pest control measures to rid premises of pests.) Noncritical violations found: 5.

China King, 2123 W. Republic Road; Reinspection. Flies substantially improved. Manager on duty able to demonstrate knowledge and willing to take charge. Cooked chicken cooled to 39 F in three hours. Raw meats and eggs stored properly to not contaminate ready-to-eat foods. Garlic in oil mixture at 40 F. No prep work done while there to require hand washing. Utensils clean and storage container clean today. Will be checking back weekly to ensure compliance. Critical violations found: 0. Noncritical violations found: 0.

Cody’s No. 3, 3449 W. Kearney; Reinspection. Soda nozzles cleaned and sanitized. Date marking in place. Using bleach and proper test strips in place.
