Crossroads Convenience Store, 2785 W. State Hwy. O, Springfield; Water samples were taken. Critical violations found: 5. *Chicken salad sandwich in deli self-serve case was 50 F. There was water dripping from coils and a lot of fuzz and dirt on the outside. *Eggs in make table dated December 2004 – need to discard. Mold on containers of ketchup in make table – need to discard. Go through food and discard items no longer used. *Dirty make table, dried food around top containers. (Top is no longer in use.) *Surfacing in east lateral field-tank is being pumped weekly. *Flies are out of control. Noncritical violations found: 4.
DJ’s Café, 250 U.S. Hwy 60 E., Republic; Critical violations found: 3. *Foods were left out at room temperature during preparation and serving process. Discussed using time as a control with required documentation for some instances. *Ham cubes on top of refrigerated make table were 50 degrees. (41 degrees and below is required.) *Ice scoop was sitting in water with lots of floating particles. Noncritical violations found: 2.
Hultgren Grocery, 7078 W. State Hwy EE, Springfield; Water samples taken. Critical violations found: 2. *Owner’s wild game was in freezer. *There are no dates on opened deli meats – once seal is broken, deli meats are to be dated for seven-day shelf life. Noncritical violations found: 0.
Kanhackit Kitchen At The Market, 10 E. Old Mill Road, Fair Grove; Food service operates seasonally out of community building in conjunction with Wednesday Farmer’s Market. Critical violations found: 2. *Ice cream mix uses raw eggs, not cooked. Asked not to use. *Flies are not under control – sticky traps over food counter. Noncritical violations found: 2.
Korean Garden, 414 Jackson, Willard; Critical violations found: 4. *There was an open glass of ice water in kitchen, and staff were eating from plate of fresh vegetables. *There was a bowl of raw chicken on clean drain board of dish machine, clean dishes sitting inside open machine – source of possible cross contamination. *There were unlabeled chemical spray bottles. *Using bug spray that is not approved for restaurant use. Noncritical violations found: 3.
Pippin’s Family Restaurant, East Shopping Center, Ste. A-103, Willard; Reinspection: Criticals violations were corrected at this time. No violations found.
Price Cutter Express, 5505 S. Hwy FF, Battlefield; Critical violations found: 2. *Polish sausage on roller grill for two hours is 105 degrees and the employee is not sure what the temperature should be. Discarded four Polish sausages. *There is no sanitizer at three-vat sink. Noncritical violations found: 1.

Summer Fresh, 163 W. Old Mill, Fair Grove; Reinspection: Critical violations found: 1. *Cut melons appear to be getting eight-day shelf life, according to the label. At 45 degrees, they should be labeled for four days. Noncritical violations found: 1.
Wimpy’s, 9374 W. FR 68, Willard; Water samples taken – unsatisfactory inspection. Scheduled food safety class for kitchen staff for June 29. Critical violations found: 9. *Employee just arriving to work walked past hand sink to cook line and put on gloves to go to work. Advised employee to discard gloves and go wash hands. *Open drink cup on cook line and cook was unaware of drink policy. *Bare-hand contact was observed with ready-to-eat foods on cook line with lettuce. *Cross contamination was observed when employee handled fresh raw hamburgers and then handled ready-to-eat burger garnishes. Employee was asked to throw away garnishes and gloves and start over. *Possible cross contamination during storage of food when open pan of raw burgers is next to open container of lettuce and open burgers are stored over ready-to-eat sliced deli meats. *French toast egg/milk wash out was at room temperature, 70 F. Two flats of eggs were out next to cook line from beginning of inspection until the end. *A lot of cooked meat and sliced deli meats in walk-in had no dates. It was impossible to tell if meat was frozen and thawed for use or how long it had been sliced. *No consumer advisory posted although restaurant serves sunny-side-up eggs and hamburgers are done to customers’ requests. *Chemical sanitizing dish machine was not dispensing any bleach in final rinse, container was empty – don’t know for how long. New container of bleach was put in place and system primed. Noncritical violations found: 7.
Wimpy’s, 9374 W. FR 68, Willard; Reinspection: Critical violations found: 1. *Reheated barbecue pork on steam table for approximately 30 minutes – cook says it was reheated to 165 F, but at 2:10 p.m., it was 120 F. Noncritical violations found: 1.
