City Restaurant Health Inspections
Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

Critical violations found: 2. *Sausage at 100 F, hot box set at 130 F, food at 120 F (sausage reheated to 170 F immediately, advised manager to use time as control on food in hot box because it doesn’t stay longer than four hours. Document initial temperatures before putting into hot box). (Potentially hazardous foods must hold 140 F or above). *Refrigeration at 60 F at 8:20 a.m. At 8:53 a.m. finally kicked onto defrost cycle. Cox Medical Center South, 3801 S. National; Discussed with Dan Richardson the nature of the complaint we received on Feb. 23. We talked about how his temperature violations on this inspection support this complaint, and he had expressed interest in using time as his control instead of temperature. We reminded him that if he is to use time as his control, then he must make a written policy specifically stating so, and document all food items that are to be discarded after four hours on a daily basis. Critical violations found: 2. *Sausage noted at 98 F, croissant with egg and bacon noted at 125 F – both reheated to 165 F. *Ice cream mix found at 50 F – discarded. Hold all dairy product below 45 F. Noncritical violations found: 4.
Culver’s Frozen Custard, 1815 E. Primrose; Critical violations found: 2. *Dish machine not sanitizing adequately at 50 ppm. Corrected immediately. *Inside ice machine (deflecter and ice chute) is unclean. Clean and sanitize more frequently. Noncritical violations found: 0.
Dairy Queen, 4150 S. Campbell; permit inspection, no permit given. Critical violations found: 3. *Grilled chicken in hot holding 120 F. This is fully cooked chicken but is supposed to be heated to 165 F on the grill or microwave before hot holding (DQ policy). Had not been preheated before hot holding. Allowed to heat on grill to 165 F-plus before returning to hot holding. *Cheese in cold holding on line 50 F, must be 41 F or less. Went over using time as a control. *Stainless steel ice bucket developed holes when handle fell off, tried to weld it and used black tape, not easily cleanable. Discarded. Noncritical violations found: 1.
Dairy Queen, 4150 S. Campbell; Reinspection. Corrections: Grilled chicken at 178 F prior to hot holding. Written policy states time as a control for condiments. No violations found.

These were removed to be washed and sanitized and put with other ice paddles in washable container. *One dishwasher is not sanitizing properly. Company contacted to check. Max Orient, 2825 S. Glenstone; Reinspection. Cited during a complaint investigation. Critical violations found: 2. *Bleach water is greater than 400 ppm in wipe cloth bucket. Corrected. *Dirty cutting board, knife and tongs. When employee was asked to wash it by management he just rinsed it with a spray nozzle and brought it back to the work area. Had him wash, rinse and sanitize. This is a potential for cross-contamination. Noncritical violations found: 0.
