City Restaurant Health Inspections

Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

March 13–17, 2006

Argentina Steakhouse, 1410 E. Republic; Discussed the frequency of using test strips to monitor concentration of sanitizer. Critical violations found: 0. Noncritical violations found: 2.

Blair-Shannon-MSU, 1001 E. Madison; Critical violations found: 1. *One case of liquid eggs out of refrigerator 58 F, case discarded. Policy to be changed so that eggs are held in refrigerator in omelet area until needed. Noncritical violations found: 3.

The Boogie aka Rum Boogie, 321 South Ave.; Reinspection: Three-compartment sink was correctly set up. Critical violations found: 3. *Employees using gloves to slice fruit, but still using bare hands to place fruit in or on drink. *Inside of ice machine better, but still requires cleaning. *Three unlabeled spray bottles in bar and kitchen. Two were discarded and the third was labeled during reinspection. Noncritical violations found: 0.

Boomer’s, 901 S. National; Reinspection: corrections: Chicken cooked at 11 a.m. is 65 F and 60 F in the pans at 1:25 p.m. – first two-hour level of cooling has been reached and still have until 5 p.m. for food to reach refrigeration temperature. Soda nozzles appear clean. No violations found.

Braum’s Ice Cream Co., 1401 W. Sunshine; Reinspection: All critical and noncritical violations corrected.

China Castle, 1231 W. Kearney; Inspection performed in conjunction with complaint investigation. Critical violations found: 4. *No person in charge able to demonstrate knowledge on food-handling, sanitizing, temperature or the code. Owner claims not to understand English. Requires person in charge to know, understand and apply correct procedures. *Chipped and cracked spatula in clean utensil storage by register. Requires food-contact surfaces to be in good repair. *Grease dripping from vent hood over stove. Requires food-contact surfaces (wok/stove pans) to be protected from grease and dust from hood above. Repeat violation. *Utensils and food-contact surfaces not sanitized. Requires four separate steps: 1) Wash with soapy water, 2) rinse with clean water, 3) sanitize with 50-100 ppm of bleach or 200 ppm of quaternary ammonia compound, and 4) air-dry. Noncritical violations found: 12.

China Castle, 1231 W. Kearney; Reinspection: Critical violations corrected. Owner can understand most spoken word and read most English. Nine of 12 noncritical violations corrected.

Coyote’s Adobe Cafe, 1742 S. Glenstone; Critical violations found: 3. *Rice not cold-holding at proper temperature. Discarded and corrected. Must cold-hold at 41 F or less. *Inside ice machine ice chute not clean (clean and sanitize). * Some soda nozzles not clean (clean and sanitize). Noncritical violations found: 9.

D’Arpinos Italian Cafe, 3014 S. National; D’Arpino’s does sell whole muscle intact steaks, and according to code, they do not need a consumer advisory. I informed Mark D’Arpino about this and let him know that he does not need a consumer advisory for selling his ribeye steak. Critical violations found: 0. Noncritical violations found: 3.

Delaware Elementary, 1505 S. Delaware; no violations found.

Dippin’ Dots, 2825 S. Glenstone; no violations found.

Domino’s Pizza, 538 S. National; Critical violations found: 0. Noncritical violations found: 2.

Fazoli’s, 2055 E. Independence; Discussed the importance of utilizing test strips regularly to monitor concentration of sanitizer. Critical violations found: 2. *Ready-to-eat shrimp in walk-in cooler not properly labeled with a use-by date. Corrected on site. *Quaternary sanitizer found at 100 ppm. Maintain at 200 ppm. Corrected on site. Noncritical violations found: 2.

Glendale High School, 2727 S. Ingram Mill; Reinspection: All violations corrected – inside ice machine ice chute clean and sanitized. No violations found.

Great American Cookie Co., 2825 S. Glenstone; Critical violations found: 2. *No expiration dates on opened latte or ice cream mix (store policy is six days according to employee). *Hose at three-vat sink hangs down below flood rim of sink. Noncritical violations found: 6.

Great Wall Buffet, 3130 S. Glenstone; Critical violations found: 7. *Many employees’ open drinking cups throughout kitchen (must have lid and straw). Corrected. *Raw chicken stored above produce in walk-in cooler. Corrected immediately – all chicken was moved to lower level shelf. *Eggs left out of cooler, not cold-holding adequately (must cold-hold at 41 F or below). Discarded. *Dish machine not sanitizing adequately (must sanitize at 50-100 ppm). *Meat knives not stored clean on rack (must wash, rinse and sanitize prior to storage). *Evidence of mice and roaches (pest control and cleanliness needed to rid premises of pests). *Sanitizing solution too strong 200 ppm (must be 50-100 ppm). Noncritical violations found: 9.

Great Wall Buffet, 3130 S. Glenstone; Reinspection: Meeting with pest control to check traps – still a problem. Pest control did treat facility, plugged holes and put sweeps on doors to help rid premises of the problem. Dish machine repaired and sanitizing properly. No meat out at room temperature. Sanitizing solution at proper strength. Leak under three-compartment sink repaired. Critical violations found: 3. *Open employee drink cups (corrected with lid and straw). *Pan of raw chicken stored above cream cheese (corrected immediately). * Knives not stored clean (must be washed, rinsed and sanitized prior to storage). Noncritical violations found: 6.

Hickok’s Steakhouse & Brewery, 314 S. Patton; Critical violations found: 2. *Can opener and ladles in clean equipment not clean. Requires food-contact surfaces to be washed, rinsed, sanitized and air-dried. Corrected by washing, rinsing, sanitizing and air-drying. *Unlabeled spray bottles in kitchen. Requires working containers of cleaners to be clearly and individually labeled. Corrected by disposal of contents and cleaning out bottles or labeling. Noncritical violations found: 4.

Kentwood Hall, 400 E. St Louis; Critical violations found: 2. *Clean utensil pan contains food debris. *No back-flow preventer on hose bib with hose. Call when corrected. Noncritical violations found: 3.

Kum & Go, No. 479, 510 W. Republic; Critical violations found: 0. Noncritical violations found: 2.

McDonald’s, 3250 E. Chestnut; Critical violations found: 1. *Small salad and produce cooler not cold-holding adequately (corrected, at 41 F). Noncritical violations found: 2.

McDonald’s, 1717 W. Battlefield; Inspection done due to complaint. Critical violations found: 0. Noncritical violations found: 6.

Mr. Goodcents Subs & Pastas, 203 E. Kearney; Critical violations found: 2. *No chlorine in sanitizer buckets or in back sanitizer sink. Corrected by changing out solution. Repeat violation. *Unlabeled spray bottles. Working containers shall be clearly and individually labeled. Corrected by labeling. Noncritical violations found: 2.

Mr. Goodcents Subs & Pastas, 3342 S. National; Critical violations found: 1. *Ice machine has mold growth on inside. Clean on a more frequent basis. Noncritical violations found: 1.

New China, 2725 N. Kansas; Reinspection: Food-grade liners in place, to-go bags replaced with food grade plastic bags. Raw meat and eggs rearranged to prevent cross contamination. Utensils cleaned and sanitized. Hand-washing procedures correct today, will plan to do education on March 28 at 9 a.m. Critical violations found: 1. *Knives still not cleaned before putting away (corrected immediately). Noncritical violations found: 1.

Papa John’s Pizza, 1282 E. Republic; Discussed with manager William Worrell the importance of keeping the dumpster area clean as a part of a well-rounded pest prevention plan. Critical violations found: 0. Noncritical violations found: 2.

Papa John’s Pizza, 1814 W. Kearney; Discussed storage of pizza slides in clean places, wall behind three-vat sink not clean, cutting board with can opener and onion slicer not clean. Critical violations found: 2. *Tomato slicer not clean (washed, rinsed, and sanitized). *Chemical spray bottles hung above three-vat sink on clean pan rack (chemicals must be stored so as to prevent cross contamination). Noncritical violations found: 6.

Papa Murphy’s, 2456 N. Kansas; Critical violations found: 1. *Can opener not clean (utensils in contact with food must be washed, rinsed, and sanitized after use or at least once a day). Corrected immediately. Noncritical violations found: 5.

Pasta Express, 3025 W. Republic; Permitted with understanding that business is in compliance with all other departments. No violations found.

Pershing School, 2120 S. Ventura; Critical violations found: 0. Noncritical violations found: 2.

Qdoba Mexican Grill, 900 E. Battlefield; Discussed the importance of utilizing the correct test strips to monitor the proper concentration of sanitizer. Critical violations found: 1. *Sanitizing water found at 100ppm quaternary sanitizer. Maintain concentration of 200 ppm. Corrected on site. Noncritical violations found: 1.

Quick Trip, 325 W. Cardinal; Spoke with Chris Stewart about using time as a control for hot dogs and taquitos. In today’s case, the temperature dial on the hot rollers was set very low for no apparent reason. He reheated the food to 165 F and noted the holding temperature of 140 F on his hot roller dial at No. 7. Chris said he may draft a policy for using time as a control, rather than temperature. Plan to verify this on a reinspection for the soda nozzles. Critical violations found: 2. *Hot dogs and taquitos not properly held above 140 F. Corrected on-site to 165 F. *Soda nozzles are soiled and beginning to grow mold. Clean on a more frequent basis. Noncritical violations found: 3.

Quick Trip, 325 W. Cardinal; Reinspection: Met with Chris Stewart on this follow-up inspection, to notice that all previously listed violations have been corrected. No violations found.

Rib Crib Barbecue, 425 W. Sunshine; Critical violations found: 3. *Employee washing dishes sneezed, rubbed nose and did not wash hands before taking clean pans off tray. Discussed when to wash hands with manager and employee. *Baked potatoes in hot drawer 130 F. Discarded. Drawer was not turned on. Potentially hazardous foods must maintain 140 F when held hot. *Smoked turkey in hot holding unit 120 F, other foods in unit 140 F and above. Turkey discarded. This item is more difficult to hold hot because it is in smaller quantities. Noncritical violations found: 0.

Ruby Tuesday, 2825 S. Glenstone; Critical violations found: 4. *Employee measured out portions of cooked French fries with bare hands. Requested new fries be prepared, plates of fries removed. Discussed no bare-hand contact policy. *Ice cream mix stored next to drink ice at bar is 61 F. Discarded. Area of storage will not hold product at 45 F or less. Discussed alternatives. *Raw meat in drawer under cookline 48 F–50 F. Manager to contact repair service. *When presented for calibration, food thermometer contained food debris. Thermometer must be washed and sanitized between use. Noncritical violations found: 4.
