City Restaurant Health Inspections

Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

March 27–31, 2006

Aunt Martha’s Pancake House, 1700 E. Cherokee; Reinspection: corrections: dish machine is now dispensing proper amount of chlorine in final rinse. No violations found.

Bailey School, 301 W. Central; Critical violations found: 1. *Unlabeled spray bottle. Working containers of cleaners shall be clearly and individually labeled. Bottle was janitor’s. Corrected by removing. Noncritical violations found: 1.

Baja Grill, 2926 S. Campbell; Critical violations found: 2. *Foods being reheated for hot holding are not being heated to 165 F when the beef was 112 F and 108 F shortly after reheating. Allowed to reheat to 165 F and placed back on the steam table as product had not been on for more than an hour. *Flan made Wednesday is not dated. Corrected on site. Noncritical violations found: 0.

Bamboo Inn, 948 S. Glenstone; Critical violations found: 2. *Soda Nozzles not clean. Corrected immediately. *Leak under three-compartment sink waste-line (maintain in proper repair). Noncritical violations found: 4.

Baskin-Robbins, 920 W. Kearney; Critical violations found: 2. *Half-gallon of milk dated March 15. Owner states he washed and filled this container from gallon container. Requires refrigerated potentially hazardous food to be clearly labeled at the time it is opened to indicate the date by which the food shall be consumed. *Half-gallon milk containers re-used. Owner states he washed and filled half-gallon container from gallon container. Requires food contact surfaces to be easily cleanable. Noncritical violations found: 4.

Breadeaux Pizza, 5360 S. Campbell; Discussed pest prevention plan and importance of monitoring facility. Critical violations found: 1. *Sausage pizza at 129 F, pepperoni pizza at 130 F, and mushroom pizza at 132 F. Maintain hot-holding temperatures at or above 140 F. Corrected by reheating to 165 F. Noncritical violations found: 1.

Bridges For Youth, 834 N. National; Discussed prohibition against bare-hand contact with ready-to-eat food. Critical violations found: 1. *One spray bottle not labeled. Requires working containers to be clearly and individually labeled. Corrected by labeling. Noncritical violations found: 1.

Buckingham Smokehouse Barbeque, 2002 S. Campbell; Critical violations found: 5. *Salads containing meat are not dated; should have date based on day meat was cooked. *Meat in three-door refrigerator is 47 F (allowed 45 F +/- 2 degrees) but giving it six-day shelf-life. At this temperature you would only get a four-day shelf-life. Product moved to colder cooler (34 F) remarking shelf-life to reflect four days. Some product will expire at the end of the day. *Four pans of beans dated March 18–23 and 19¬–24; today is the 28th. Beans were discarded. *Using time as a control for meats on steam table, but discard time is not documented. Also need written policy on how the restaurant is using time as a control. *Cold water turned off in smoker room out front where raw meat is prepped before going into the smoker. Noncritical violations found: 6.

Buckingham Smokehouse Barbeque, 2002 S. Campbell; Reinspection: corrections: Marking time on top of steam table pans, policy in place, cold water turned on at smoker hand sink, meat in three-door refrigerator 40 F, no out-of-date product. Continue to work on dating meat for salads, just transfer date from original container to “chopped” container. No violations found.

Canton Inn, 205 W. Sunshine; Critical violations found: 0. Noncritical violations found: 4.

Cedars Restaurant, 3322 S. Campbell; Discussed frequency of cleaning vent over the grill area. Frequency should be two times a week for the filters, if the current buildup consists of one week’s worth. Critical violations found: 2. *Potentially hazardous, ready-to-eat lunch meats in walk-in cooler are not properly date labeled. Label all potentially hazardous, ready to eat foods with a seven-day “use by” date. *Ice bin in front waitress station has mold growth. Must discard ice and clean and sanitize interior. Noncritical violations found: 4.

College Street Cafe, 1622 W. College; Reinspection: Evidence of mice cleaned up and no new evidence today. No violations found.

Cookies By Design, 302 Republic; Discussed pest prevention methods. Critical violations found: 0. Noncritical violations found: 3.

Dairy Scoops & Deli, 1724 N. Glenstone; Critical violations found: 0. Noncritical violations found: 3.

Domino’s Pizza, 230 E. Republic; Discussed pest-prevention methods. Critical violations found: 0. Noncritical violations found: 2.

Easy’s Cajun Restaurant & Bar, 1710 S. Glenstone; Critical violations found: 4. *Knives stored unclean. Corrected. Clean and sanitize prior to storage. *Can opener not clean. Corrected. Clean and sanitize daily. *Sanitizing solution too strong at 200 ppm chlorine. Corrected at 50–100 ppm chlorine solution. *Chemicals stored with food products. Corrected. Chemicals stored in designated area away from all food products. Noncritical violations found: 3.

Fiesta Ranchera, 3356 S. Campbell; Discussed importance of frequently washing hands. Critical violations found: 0. Noncritical violations found: 3.

Fremont School, 2814 N. Fremont; No violations found.

Garrison’s “A Neighborhood Place”, 2341 W. Division; Inspection done due to complaint. Permit suspended. Food cannot be prepared until reinspected and permit reissued. Call Health Department representative when water is restored. Critical violations found: 1. *No water available in restaurant today. (Plumbing must be in good working order and water must be available at all times during operation. Discarded all food made this morning). Noncritical violations found: 1.
