Ebbet’s Field, 1027 E. Walnut; Critical violations found: 4 *Bare-handed contact with lettuce, cheese, and parsley. Requires no bare-handed contact with ready-to-eat foods. Can use tongs, spatulas, shaker containers, deli tissues, etc. or gloves. Corrected. *Chicken salad 58 F after 1 p.m. Requires potentially hazardous food to be cold-held at 41 F or below. Determined that chicken salad was made with hot freshly cooked chicken combined with unopened, room temperature mayonnaise. Corrected by discarding and cooling chicken and mayonnaise for next batch. *Cutting boards scored and not easily cleanble. Requires food-contact surfaces to be smooth and easily cleanable. *Chlorine sanitizer at bar greater than 200 ppm. Requires 50-100 ppm of chlorine sanitizer. Corrected. Gallery Bistro, 221 E. Walnut; Critical violations found: 2 *Salmon clam sauce 59 F and sour cream 51 F in Coke cooler. Ribeye 46 F in reach-in cooler. Mahi-mahi and calamari 48 F in under-counter cooler. Requires potentially hazardous food to be held at 41 F or below. New coolers to be delivered June 9. Items above 50 F were discarded. Other items were placed on pans of ice. *Plumbing sewer lines and first floor leaking into basement in two or three areas. Requires sewer lines to discharge to city sewer and to be maintained in good repair. Noncritical violations found: 10.
Gardens Independent Living, 2730 S. Nettleton; Inspection done due to complaint. Critical violations found: 1 *Cantaloupe, melon, and cottage cheese at 52 F to 55 F.
