City Restaurant Health Inspections

Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

(Education materials given – will review with staff with Spanish material.) *Open drink cups in kitchen – discarded. (Must have lid and straw.) *Inside ice machine chute not clean. (Clean and sanitize.) Noncritical violations found: 10.

Ben’s Carriage House Sandwich Shop, 1772 S. Glenstone; Critical violations found: 6. *Third-shift cook handling raw eggs, then handling biscuits. (Must wash hands after handling raw eggs.) *Employees drinking from open cups. (Must have lid and straw). *Bare-hand contact with ready-to-eat biscuits, toast, and waffles. (Must use tongs or other utensils, or gloves to handle ready-to-eat foods). *Can opener not clean. (Clean and sanitize daily.) *Knives stored unclean in rack. (Clean and sanitize prior to storage.) *In-use knives stored in unclean crevices. (Must be kept on clean surface and washed and sanitized every four hours.) Noncritical violations found: 5.

Ben’s Carriage House Sandwich Shop, 1772 S. Glenstone; Reinspection. Critical violations corrected, a staff meeting and education given in English and Spanish on food safety dealing with bare-hand contact, washing hands, and storing utensils clean and sanitized, temperature checks on steam table items. Critical violations found: 0. Noncritical violations found: 1.

Brown Derby No. 12 Deli, 2023 S. Glenstone; Critical violations found: 0. Noncritical violations found: 1.

Casper`s, 601 W. Walnut; Critical violations found: 1. *Gloved hands in contact with raw burger and then assembled bun and lettuce without washing hands and changing glove. (Requires utensils and gloves that contact raw food not contact ready-to-eat food.) Discussed use of spatula for raw burger and other methods to correct. Noncritical violations found: 0.

Central High School, 423 E. Central; Critical violations found: 1. *Cottage cheese on teachers salad buffet 46 F. (Requires potentially hazardous food to be cold-held at 41 F or below.) Corrected by placing cottage cheese in reach-in cooler and temperature reached 40 F. Noncritical violations found: 2.

Clarion Hotel - Classic Sports, 3333 S. Glenstone; Critical violations found: 1. *One refrigerator not cold-holding adequately: 52 F. (Must hold at 41 F or below.) Noncritical violations found: 4.

Coyote’s Adobe Cafe, 1742 S. Glenstone; Critical violations found: 3. *Sour cream on food bar not cold-holding adequately. Discarded after four hours at inadequate temperature. *Knives stored unclean in knife rack. Cleaned and sanitized. *Sanitizing solution too strong at 200 ppm. Corrected at 50-100 ppm chlorine solution. Noncritical violations found: 4.

Drury University Cafeteria Commons, 900 N. Benton; Critical violations found: 2. *Eggs can be cooked to order for breakfast. (Requires consumer advisory to inform customers that consumption of undercooked animal products could cause food-borne illness on menu or wall.) Corrected. *Several utensils in clean storage not clean. (Requires food-contact surfaces to be clean to sight & touch.) Corrected by removing all utensils to be washed, rinsed, sanitized and air-dried. Repeat violation. Discussed changes in procedure and storage to correct. Noncritical violations found: 10.

Food 4 Less, 313 E. Battlefield; Reinspection. Corrections: Manager aware of how to make sanitizer in proper concentration, aware of hot-hold temperature for chicken and how to properly cool, metal-stem thermometer clean. Critical violations found: 0. Noncritical violations found: 0.

Golden Corral, 2734 N. Kansas Expressway; Inspection done due to complaint. Critical violations found: 6. *Employee working in meat room took off gloves and did not wash hands before putting on new gloves. (Hands must be washed when contaminated.) *Employee dropped ladle on ground, picked it up with gloves and did not change gloves before going back to food prep. (When contaminated, gloves should be removed and hands washed before putting on new gloves.) *Open drink cup in dish room. (Must have cup with lid and straw for drinking in prep areas.) *Time as control procedures not being followed. (Must have written policy in place and documentation of time and temp initially put out and changed or discarded.) *Salad utensils coated with food debris, slicer coated with food debris, can opener blade not clean, knife holder not clean, knives not clean, metal-stem thermometer not clean. (All utensils must be washed, rinsed, and sanitized after use.) *Waste line at dishwasher leaking. (Plumbing not in good repair.) Noncritical violations found: 9.

Hardee’s, 1515 W. Battlefield; Polaris residential gas water heater 94 percent efficient, can’t read info plate. Look for info on gallons per hour recovery BTU’s and tank capacity. Discussed that slicer must be broken down and cleaned at least once every four hours as well as utensils. Critical violations found: 3. *Employee used bare hands to prepare sandwich. (No bare-hand contact allowed with ready-to-eat foods. Corrected immediately.) *Inside of ice machine moldy. (Empty out ice, remove shield and clean and sanitize the chute and bin.) *Metal-stem thermometers have food debris on them. (Wash, rinse, and sanitize after each probing.) Noncritical violations found: 8.

Harter House Bakery, 1500 E. Republic; Critical violations found: 1. *No sanitizer used at three-compartment sink to properly sanitize pans. (Use 50-100 ppm concentration of bleach water to effectively sanitize. Corrected on site.) Noncritical violations found: 1.

Holiday Lanes, 1111 W. Kearney; Critical violations found: 2. *Whipped cream in front juice reach-in cooler at 50 F. (Requires potentially hazardous foods such as whipped cream to be cold-held at 41 F or below. Corrected by discarding can and will store working can in kitchen refrigerator.) *One pink and one yellow spray bottle not labeled next to three-vat sink. (Requires working containers of cleaners to be clearly and individually labeled. Corrected by labeling.) Noncritical violations found: 3.

Izumi Hatake, 302 Walnut; Reinspection. Corrections: Observed server washing hands after busing table, no home-type bug spray observed on site. Hot water working in restrooms. Critical violations found: 0. Noncritical violations found: 0.

Jade Dynasty, 300 E. Battlefield; Reinspection. All previously listed violations have been corrected. Critical violations found: 0. Noncritical violations found: 0.

Jimmy John’s Gourmet Sandwiches, 322 E. Walnut; Reinspection. Corrections: quarternary sanitizer labeled, made in the correct concentration in third sink, went over concentrations for both quartenary and bleach with general manager, quat test strips on hand, good hand washing observed between jobs. Critical violations found: 0. Noncritical violations found: 0.

Latin Vibe, 2526 S. Campbell; Critical violations found: 1. *Live fly larvae in soda gun holder. (Removed and cleaned and sanitized.) Noncritical violations found: 2.

Lotus Chinese Food, 1834 S. Ingram Mill; Critical violations found: 0. Noncritical violations found: 5.

McDonald’s, 1221 E. Kingsley; Discussed the importance of date-marking consistency. Also, a reach-in cooler went down today. All the contents were moved to the walk-in cooler, and a work order has been placed on it. I asked management to notify our office when the cooler has been repaired and is running properly. Critical violations found: 0. Noncritical violations found: 2.

McDonald’s, 2811 N. Kansas; Inspection done due to complaints. Critical violations found: 1. *At end of inspection, noticed problem with hot water – unit turned down on low, restored within 30 minutes. Soaker sink heats its own water. (New soaker sink put in takes more hot water than hot water heater provides.) Noncritical violations found: 3.

Modern Day Veterans Chapter 419, 504 E. Commercial; Critical violations found: 0. Noncritical violations found: 7.

Price Cutter Deli, 1901 E. Division; Critical violations found: 2. *Four racks of ribs were 77 F at 9:50 a.m. (Hot-hold unit was not turned on. Discarded immediately. (Must be held at 140 F or above.). *Some fried chicken and sour cream were 67 F at 10 a.m. Discarded promptly. (Must be held at 45 F or below.) Noncritical violations found: 4

Ryan’s Family Steak House, 2501 S. Campbell; Critical violations found: 6. *Giving prepped food an eight-day shelf life when code only allows four days at cold hold of 42-45 F. Cooler running 47 F today. *Although restaurant is using time as the control for hot and cold buffet foods, no times are being documented at the time the food is brought out, and when new food is brought out, old food is put on top. *Potentially hazardous foods are not held at 45 F or less when ice cream mix is 49 F and chocolate milk is 51 F in the walk-in cooler. (Repair company called out and cooler temperature down to 45 F before leaving.) *When presented for calibration, several metal-stem thermometers contained food residue. (Clean and sanitize between use.) *Ice machine recently cleaned by outside company contained mold on the inside chute area. Meat room cutting board contained food residue. *Water leaking under three-vat sink in several areas. Noncritical violations found: 7.

Scramblers, 3653 E. Sunshine; Reinspection: Critical violations corrected. Both cook’s coolers repaired and cold-holding adequately, all stored foods cold-holding adequately. Critical violations found: 0. Noncritical violations found: 2.

Sharky’s, 525 S. Glenstone; Critical violations found: 0. Noncritical violations found: 6.

Smillie’s IGA Bakery, 1421 S. Glenstone; Critical violations found: 0. Noncritical violations found: 1.

Steak-N-Shake, 1550 S. Glenstone; Reinspection. Critical violations corrected, dishwasher sanitizing at an adequate strength 50-100 ppm chlorine solution, inside ice bins and ice machine clean and sanitized. Critical violations found: 0. Noncritical violations found: 2.

Subway, 303-A E. Battlefield; Critical violations found: 1. *Not all potentially hazardous foods are held at 140 F and above when cream of potato soup was 120 F on hot hold unit at 9:45 a.m. Manager unsure if this was a reheat. (Allowed to reheat product due to short time frame, soup 177 F.) Noncritical violations found: 0.

The Acoustic Cafe, 434 S. Jefferson; Reinspection. Corrections: no open food behind cook line, no mouse droppings observed. However, back door gap has not been repaired and spring traps are still not reset. Call this office when repairs have been made. Noncritical cleaning issues have also been resolved. Critical violations found: 0. Noncritical violations found: 0.

TCBY, 1907 S. Glenstone; Critical violations found: 1. *Sanitizing solution too strong at 200 ppm. (Corrected at 50-100 ppm chlorine solution.) Noncritical violations found: 4.

Waffle House, 4128 S. National; Discussed pest control and grease disposal. Critical violations found: 0. Noncritical violations found: 2.

Wilkes 2 In 1 Fish Palace, 828 W. Commercial; Reinspection. Refrigerator at 40 F, other criticals corrected. Finally caught owner at restaurant, restaurant has been closed since last inspection. Critical violations found: 0. Noncritical violations found: 0.
