Carlos O’Kelly’s Mexican Café, 4100 S. Campbell; Critical violations found: 4. *Employee drinks are not in closed beverage containers. (Employee drinks must be in a closed beverage container or in a cup with a lid and a straw.) Corrected. *Employee was observed placing lemons in water glasses and chips into a basket with bare hands. (Employee must not contact ready-to-eat foods with bare hands.) Corrected by reviewing policy with employees. *Leak in waste line at three-vat sink. (Plumbing must be maintained in proper repair.) *Bottles of cleaner are not labeled with proper name – no label. Carlos O’Kelly’s Mexican Café, 4100 S. Campbell; Reinspection: Employee drinks are in closed beverage containers. Utensils are now available for all lemons and drink garnishes. Leak in waste line has been repaired. Bottles of cleaner are not spread throughout kitchen and are labeled. Soap is available at bar hand sink. Critical violations found: 0. (Must ensure no bare-hand contact with ready-to-eat foods.) *Two drink dispenser guns were not clean. (Must clean and sanitize more frequently.) *Container of WD-40 and one of Lanacane were setting above a food preparation table. Promptly relocated. Cedars, 513 N. West Bypass; Critical violations found: 3. *Inside of ice machine is moldy. (Clean and sanitize inside of machine after emptying out ice.) *Cutting boards on make table at mixer area are too deeply grooved. Once too deeply grooved, cutting boards are unable to be sanitized. (Replace.) *Chemicals are stored with food and clean pans. (Chemicals must be stored in a separate location from clean utensils and from food.) Noncritical violations found: 14.
Century Buffet, 210 E. Sunshine; Reinspection: Soda nozzles are clean and are now being cleaned every day. Sushi sink has been taken out of service. Salad prep sink drain has been repaired so that the water does not splash out onto the floor. Critical violations found: 0. Noncritical violations found: 1.

Great Wall Buffet, 3130 S. Glenstone; Critical violations found: 4. *Employee eating and drinking from open cup in kitchen. (Employees must eat in designated area away from food preparation.) Corrected and employees were educated. *Cottage cheese is not cold-holding on buffet properly at 55 F. Corrected and discarded. More ice was filled around buffet containers to keep foods cold-holding at proper temperatures. *Some utensils were stored dirty. Corrected – washed, rinsed and sanitized before storing. *Equipment is not being sanitized in three-compartment sink – wash and rinse only. Employee was educated on how to properly wash, rinse and sanitize equipment. Corrected. Noncritical violations found: 7.
