CITY RESTAURANT HEALTH INSPECTIONS

Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical

violations, “although important to the overall food hygiene of the establishment, do not

necessarily present an immediate threat to food contamination, illness and/or injury.” The

number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

April 18–22, 2005

Aunt Martha’s Pancake House, 1700 E. Cherokee; A hand sink has been installed in the kitchen by dishwashing area. Critical violations found: 0. Noncritical violations found: 4.

Bair’s Grocery/Deli, 5419 S. Campbell; Reinspection: Inside of ice machine has been cleaned and sanitized, must clean as often as necessary to keep rust from forming and accumulating. All noncritical violations have been corrected. Critical violations found: 0. Noncritical violations found: 0.

Best Western-Coach House Inn, 2535 N. Glenstone; Reinspection: Individual cream cheese cartons are being stored in a container that is prefrozen the night before. Critical violations found: 0. Noncritical violations found: 0.

Braum’s, 604 N. Glenstone; These violations were the result of a complaint investigation. Critical violations found: 1. * Inside of two ice bins were not clean. (Must clean and sanitize more often.). Noncritical violations found: 5.

Cielito Lindo, 730 N. Glenstone; Critical violations found: 1. * Cheese sauce was not being cooled from 140 - 70 degrees within two hours. (Promptly refrigerated). Noncritical violations found: 3.

Cowboys 2000, 2929 E. Kearney; Critical violations found: 2. * Bar nozzles not clean (clean and sanitize daily). * Inside of ice machine not clean ( clean and sanitize). Noncritical violations found: 1.

Dairy Queen, 2300 W. College; Wood holding hand sink in place needs sealed with wood sealer. Critical violations found: 2. * Chili at 130 degrees F at 3:33 p.m. (Potentially hazardous foods must hold hot at 140F or above. Reheated to 175F immediately). * Dirty knives put back onto magnetic strip with food debris on them (Washed, rinsed, and sanitized immediately). Noncritical violations found: 2.

Dairy Queen, 2300 W. College; Reinspection: Critical violations found: 1. * Chili at 135.5 degrees F at 10:15 a.m. in hot hold (Potentially hazardous foods must be held hot at 140 degrees F or above. Reheated immediately to 180 degrees F). Water level was low, watch temperatures and document over weekend, will check back on to make sure holding temp on 4/25/05. Noncritical violations found: 1.

Harbor House, 636 N. Boonville; Critical violations found: 2. * Cottage cheese, eggs, potato salad and other potentially hazardous foods were not held at 41 degrees F or below in large glass-front refrigerator. Requires potentially hazardous foods to be held at 41 degrees F or below. Food discarded. * Large box of cream cheese held in refrigerator was full of mold. Box was discarded. Kum & Go No. 466, 2506 W. College; Critical violations found: 2. * Hot dogs at 132-137 degrees F on front of roller grill (Potentially hazardous foods must be held hot at 140 degrees F or above. Discard after four hours). * No bleach on-site – used for sanitizer. (Must wash, rinse, and sanitize all utensils in contact with food.) Corrected immediately. Noncritical violations found: 0.

Kum N Go No. 466, 2506 W. College; Reinspection: Hot dogs were at 145-160 degrees F on roller grill. Advised manager that time as control may be used if cannot hold properly. Critical violations found: 1. * Corn dogs at 130-134 degrees F under heat lamp (Potentially hazardous foods must be held hot at 140 degrees F or above. Reheated immediately to 175F). Noncritical violations found: 1.

La Quinta Inn, 1610 E. Evergreen; Critical violations found: 2. * Cream cheese was out in Styrofoam bowl without any ice and was 67 degrees F. Immediately discarded (must keep potentially hazardous foods at 41 degrees F or below). * Drink dispenser heads on juice machine were not clean (must clean and sanitize more frequently). Ristorante Gilardi, 820 E. Walnut; Critical violations found: 2. * Cutting board deeply grooved and stained. Requires resurfacing or replacing. * Soda nozzle dispenser at bar has mold. Requires cleaning and sanitizing. Noncritical violations found: 1.

Sharky’s, 525 S. Glenstone; Critical violations found: 1. * Sanitizing solution was greater than 200 ppm chlorine. Immediately drained and refilled. (Must keep sanitizing solution at 50-100 ppm chlorine.). Noncritical violations found: 2.

Smoothie King, 3305 S. Campbell; Reinspection: Ice chute has been cleaned and sanitized. All noncriticals have been corrected. Critical violations found: 0. Noncritical violations found: 0.

Sonic Drive-In, 1107 W. Sunshine; Critical violations found: 2. * Employee drink in food prep area is in an open container (employee drinks must be in a closed beverage container, or have a lid and a straw, corrected immediately). * Utensils stored not clean in a dirty container (utensils must be clean to sight and touch and stored in a clean container. Chesterfield; Critical violations found: 5. * Raw chicken stored above ready-to-eat foods (Raw potentially hazardous foods must be stored in way so as not to cross contaminate ready-to-eat foods). * Refrigerator holding at 48 degrees F – make table holding at 54 degrees F (Refrigeration must hold at 41F or below. Discarded attached list of food). * Potentially hazardous foods not date marked (Potentially hazardous foods must be marked with use by date if kept over 24 hours). * Slicer and knives not being cleaned and sanitized every four hours (Utensils and equipment must be washed, rinsed, and sanitized every four hours if in contact with potentially hazardous foods). * Soda nozzle at bar and inside of ice machine moldy (Empty ice out of ice machine and clean and sanitize). Springfield Golf & Country Club Snack Bar, 3106 E. Valley Water Mill; Critical violations found: 1. * Upright cooler not cold-holding at a proper temperature (all potentially hazardous foods discarded). Noncritical violations found: 2.

The Courts, 4136 E. Kearney; Critical violations found: 2. * Hands not washed prior to glove use (corrected, staff educated on washing hands after handling money, touching face, touching contaminated equipment, before glove use). * Sliced beef and meatballs not hot holding at an adequate temperature. (corrected, reheated to 165 degrees F within half hour of opening business). Noncritical violations found: 4.

The Repair Shop, 2251 E. Kearney; Critical violations found: 1. * Sanitizing solution too strong 200 ppm – corrected at 50-100 ppm. Noncritical violations found: 8.

April 25–29, 2005

Acambaro Mexican Restaurant, 1779 S. Glenstone; Some of these violations were the result of a complaint investigation. Critical violations found: 3. *Food employee was observed cutting up onions and cilantro with bare hands. (Must prevent bare hand contact with ready-to-eat foods). *Cooked ground beef was 130 degrees F at 11:15 a.m. Promptly reheated to 165 degrees F. (Must reheat to 165 degrees F or above and hold at 140 degrees F or above.) *Dish machine’s final rinse had greater than 200 ppm chlorine. (Must be 50-100 ppm chlorine.) Noncritical violations found: 3.

Acambaro Mexican Restaurant, 1779 S. Glenstone; Reinspection: Food employees were observed wearing gloves appropriately at this time. Hot hold temperatures were within acceptable ranges. Final rinse of dish machine was 50-100 ppm chlorine. Critical violations found: 0. Noncritical violations found: 0.

Braum’s, 604 N. Glenstone; Reinspection: A letter will be sent to corporate contact to inform of possible consequences concerning lack of compliance. Critical violations found: 1. *Inside of one ice bin had substantial build-up inside and around ice bin. I took apart unit and stayed until it was cleaned and sanitized – this was the second follow-up visit on this specific item. (Must clean and sanitized food contact surfaces more frequently.) Noncritical violations found: 3.

Braum’s Ice Cream, 2555 N. Kansas Expwy.; Critical violations found: 4. *Cartons of eggs and pancake batter at 49 F and 59 F on cold hold table top. (Potentially hazardous foods must be held at 45 F or below. Moved to refrigerator at 35 F.) *Soda nozzles are moldy, shake spindles coated with shake mix. (Utensils or equipment in contact with food or beverages must be washed, rinsed and sanitized. Milk spindles cleaned while on site.) *Dirty scoops put into clean dipper well – dipper well not running. (Utensils must be washed, rinsed, and sanitized or keep water in dipper well running.) *Waste line under three-vat sink is leaking. (Plumbing must be in good repair). (Chicken discarded and hot box temperature turned up.) *Make table for chicken not clean and sanitized every four hours. (Discard old flour, clean and sanitize equipment.)
