Listed here are the restaurant health inspections conducted by the Springfield-Greene County Health Department. Restaurants are inspected for critical and noncritical violations of state standards. According to the Springfield-Greene County inspection code, critical violations are “more likely than other violations to contribute to food contamination, illness and/or injury.” And noncritical violations, “although important to the overall food hygiene of the establishment, do not necessarily present an immediate threat to food contamination, illness and/or injury.” The number of both critical and noncritical violations are given and specific critical violations are listed. *Denotes a critical violation.

Churchill Estate Café, 1604 E. Republic Road; Critical violations found: 3. *Insulated pitchers of skim milk and half and half were 48.5 degrees F at 10:45 a.m. Promptly refrigerated. (Must keep these items at 45 degrees F or below.) *Water leaking onto floor under dish line. (Must repair plumbing.) *Quaternary ammonia sanitizer used for wiping cloths was 400 ppm. Immediately corrected. (Must keep at 200 ppm quaternary ammonia.) Noncritical violations found: 7.
Cook’s Kettle, 200 W. Commercial; Critical violations found: 1. *Cutting board is too deeply grooved to properly sanitize. Corrected by turning over to other, unused, clean side – advised to watch for timing to refinish or replace board. Noncritical violations found: 1.
Fast N Friendly No. 16, 501 W. Chestnut; Critical violations found: 2. *Gravy in crock pot at 98 degrees F and person in charge did not know what time the cooling process began from the shift before. (Requires cooling to be closely monitored as food falls from 140 degrees F to 70 degrees F within two hours and from 70 degrees F to 41 degrees F within four hours.) Corrected by discarding. *Tongs used for dispensing hot hold items are not being changed out at least every four hours. (Utensils that come into contact with potentially hazardous foods must be washed, rinsed and sanitized at least every four hours – schedule must be put in place to monitor this. Corrected by changing out current tongs. Noncritical violations found: 1.
