Project description: Flat Creek restaurant is coming to Bolivar. Restaurateur Alan Kram purchased the Cape Fair location in 2009, then partnered with Josh Rasmussen in 2019 to open in Republic. The Bolivar restaurant is the third iteration of the dining establishment known for its catfish, hand-cut steaks, small-batch barbecue, sandwiches and dinner entrees. Thane and Drew Kifer of Bolivar’s Pinecone Holdings will lease the building at the intersection of Aldrich Road and Boston Avenue to the owner-operators. Kram said it will seat close to 280 with plenty of parking for vehicles, RVs and boats. He added the planned kitchen is large enough to allow the scratch preparation of tartar sauce, salad dressings, hush puppies, breading, onion rings and hand-formed burgers. A fourth location is planned next year in Webb City, Kram said.
