Project description: A new structure is being built over the existing restaurant, and once that's finished, the old structure will be removed from within. "It's a challenge," said Dave Demel, project manager with Saddleback Devel-opment Inc. A new roof will be put on the restaurant, and the dining and kitchen areas will be enlarged. The seating will be increased from 38 to 105. The parking lot also will be redone, and the drive-through lanes will be modified in order to accommodate more vehicles. The eatery has maintained operation throughout the renovation process, Demel said.
