Downtown plaza fills up with two new tenants

A late-night bakery and a U.S. Marine Corps office are slated to open next month in the downtown Campus Plaza Center.

The two 850-square-foot spaces fill the remainder of the $1.5 million center built by Morelock-Ross Builders Inc. to house a Qdoba Mexican Grill franchise for its Burrito Concepts LLC subsidiary in late 2012.

Morelock-Ross project manager Andy Ross said the Marine Corps recruiting office would open in mid-January, and Insomnia Cookies aims to open by the end of the month. Ross declined to disclose lease rates, but noted Morelock Ross is conducting infill work for the two new tenants.

The move marks the Pennsylvania-based cookie delivery and retail chain’s first Springfield store. The company, which serves cookies, cakes, ice cream and milk daily until 3 a.m., now has 60 locations, all of which are corporate-owned, Insomnia spokeswoman Megan Bruton said.

“When we look for a location for one of our bakeries, we look for a location with a thriving community that we can not only bring our business to, but most importantly be a part of,” she said via email, noting a target market of college students. “Springfield was the perfect fit for that community.”

Insomnia Cookies and the Marine Corps office sit between Qdoba and Firehouse Subs in the 401 S. Kimbrough Ave. center.
