Cousin Annie's 7-Layer Salad with Thousand Island Dressing

This delicious salad is always a welcome addition to the buffet table for family gatherings, bring-a-dish buffets and summer picnics. Inspired by a classic Southern favorite, this all-American salad gets a flavor upgrade topped with Thousand Island dressing rather than traditional mayonnaise.

Foodie Byte: For a healthier salad, alternate iceberg lettuce with crisp chopped romaine lettuce and accompany with choice of salad dressing or vinaigrette served on the side.
 
Ingredients
• 1 1/2 cups mayonnaise
• 1/4 cup sweet pickle relish
• 1/4 cup ketchup
• 6 cups iceberg lettuce, chopped
• 2 cups frozen green peas, thawed
• 1 cup thin-sliced red onion (optional)
• 2 cups red, orange and green bell pepper, diced
• 2 cups tomato, seeded, diced
• 1 cup shredded Cheddar cheese
• 1 cup diced bacon, cooked crisp

Preparation
1. To prepare Thousand Island dressing: combine mayonnaise, pickle relish and ketchup in bowl and whisk to blend. Cover and refrigerate to hold.
2. To assemble salad: layer 4 cups lettuce in clear bowl. Top with layers of green peas, sliced red onions, diced bell peppers and diced tomatoes.
3. Spoon Thousand Island dressing over top of salad. Top with shredded cheese and crumbled bacon. Serve chilled.[[In-content Ad]]
