Owner/developer Raliegh Cook, who also owns Alaskan Construction, is the general contractor for the 6,620-square-foot eatery. Cook's wife Marsha, who operates La Mexicana in Springfield, will run the new restaurant, Cook said. Security Design is the architect and engineer for the structure, Cook said, although he designed the building himself based on a layout and input from his wife and father-in-law. The eatery will initially seat 206, a second floor will be added in the future. Cook declined to provide a specific estimate for the construction cost, but he said it was less than $1 million. The lender is Town & Country Bank. Cook said the timeline for the restaurant's completion has changed several times, and he declined to provide an expected date for completion. The exterior of the building is stucco-like, he said, and is built from a recycled Styrofoam and concrete product. The exterior walls are 10 inches thick and the roof is eight inches thick.
