Clary leaves Tower Club, launches consulting business

Chef James Clary has launched a consulting business after exiting his five-month post at The Tower Club.

In April, Clary was hired as general manager of the private club and events venue atop Hammons Tower operated by John Q. Hammons Industries. Clary said he resigned from his post about two weeks ago to launch Chef Clary's Consulting.

While The Tower Club grew by some 20 members during his tenure, Clary said he was ready to move on to something new.

"It made me realize it's not what I want to do. I really miss working for myself," said Clary, who had operated restaurants Clary’s, Gallery Bistro and Fish prior to being hired as culinary director for Price Cutter in 2008.

Phill Burgess, vice president of marketing for JQH Industries, could not be reached for comment by deadline. Clary said he wasn't aware whether the company had hired a successor.

Chef Clary's Consulting, which launched last week, provides customer service consulting, as well as marketing and sales work.

"As much as I love the restaurant business, there are aspects I like even better. I love to teach, and I think one of the things Clary's was always known for is customer service," he said. "I think there's a real need in the market for somebody who has a program that teaches people the fine art of exceptional customer service.

"I really think it's something that's missing not only in this market, but just in general."

His first advice: hire for attitude, train for skill and sales will follow.

Clary said he is incorporating parts of his book, "Server Sales Training," but also is seeking clients in the retail industry. He said he currently has two clients, which he declined to name, and is prepared to take on up to 10.

Clary said he also is available to cook for private parties and businesses and provide wellness services.[[In-content Ad]]
