Signage is up for Springfield’s first Capriotti’s Sandwich Shop Inc., a fast-casual restaurant chain that offers high protein, vegetarian and vegan options.
Jamie and Donna Jacobsen along with business partner Larry Graham – who operate local Fazoli’s restaurants – plan to open the sandwich shop at 1318 E. Battlefield Road in September or October.
“It’s just awesome to bring such a great product to Springfield with healthy options,” Jamie Jacobsen said in a July 7 interview.
The venture, organized as Capriottis-1 of SGF LLC with the Missouri secretary of state’s office, secured a five-year lease on the former Pita Pit location in May and has been working with the city to finalize permits to start the infill work.
“We are hoping we get our permit this week,” he said. “Then we will be open within 75 to 80 days.”
Jacobsen said the partners learned about the restaurant, originally founded in Delaware in 1976 and now headquartered in Las Vegas, and drove to Bentonville, Arkansas, to try the food.
After that, they quickly decided to open an initial restaurant in Springfield and scout the area for future locations. There are more than 150 locations across the U.S. including ones in Kansas City, St. Louis, Tulsa, Oklahoma, and northwest Arkansas.
Jacobsen said each restaurant roasts whole turkeys overnight and specializes in an array of cold, grilled, vegetarian and submarine sandwiches along with salads. His favorite is the Bobbie, which is made with pulled turkey, stuffing, cranberry sauce and mayo.
“It’s like Thanksgiving on a sandwich,” he said.
The partners plan to hire up to 17 employees and anticipate a “lunch heavy” business along with catering and third-party delivery options.
The partners signed a contract to open three sandwich shops in the next three years.
