Bringing a Steakhouse back from the Ashes

Jimm Swafford was devastated when Steak & Ale closed. He managed the restaurant in Springfield, Mo. for ten years and knew the community missed it. He decided to reopen the locations as Jimm’s Steakhouse & Pub. He says things like liability insurance and, workers’ compensation and sourcing product for the menu. He says he faced new challenges as an owner, but patrons have welcomed the restaurant back.
