Beef-A-Roo adding 2nd Springfield restaurant

After debuting in Springfield earlier this year, Rockford, Illinois-based Beef-A-Roo Inc. is adding a second restaurant in the Queen City.

Building permits on file for the city show a location in the works at 3312 E. Chestnut Expressway, the site of a shuttered Hardee’s near U.S. Highway 65. Beef-A-Roo officials could not be reached for comment by deadline, but a LoopNet.com real estate listing and social media posts from the company confirm the plans.

In a June 2 Facebook post, a Beef-A-Roo marketer told a customer that the Chestnut Expressway location would open "next month."

Additionally, a Cushman & Wakefield listing for the 3312 E. Chestnut Expressway building indicates a Beef-a-Roo is coming soon. Greene County assessor records show HJH Premium Springfield Chestnut LLC is the owner of the building as of November 2022.

Beef-a-Roo leases its 1411 W. Kearney St. building from HJH Premium Springfield Kearney LLC, according to past reporting.

Beef-a-Roo, which has a menu that includes burgers, roast beef sandwiches, cheddar fries, salads, soups, baked potatoes and wraps, opened its Kearney Street restaurant in February. Replacing a former Dairy Queen, the restaurant was the first shop outside of Illinois for the family-owned fast-casual restaurant chain.
