McSalty's targets Paddy's Day opening for downtown eatery

The owners of the East Sunshine Street McSalty's Pizza Cafe are planning to open a downtown eatery in time for St. Patrick's Day.

McSalty's operators Sarah, John and Jordan Dunlop are targeting a March 15-16 opening for the restaurant, 307 S. Jefferson Ave., hoping to capitalize on St. Paddy's weekend business, said Sarah Dunlop, who will operate the downtown location with her husband, John, and brother-in-law, Jordan. The business partners are waiting for city inspections to clear, she said.

John Dunlop and business partner Brian Dodds also own the 2627 E. Sunshine St. location of McSalty's, a company founded in 1979 by Tim Calloway. Sarah Dunlop said her husband and Dodds bought into the company in the mid-2000s. Calloway, who is no longer active in the business, sold another location at 1550 E. Battlefield Road to Jack Dixon, Dunlop said. John Dunlop and Dodds had previously owned a McSalty's at 1141 E. Delmar St., now the site of Bambino's Cafe.

"We're really hoping to get back in touch with the college students," Sarah Dunlop said. "They were the life of McSalty's when we had our Delmar store. We lost that connection because we haven't been close enough to campus for the students to even know who we are. A lot of the people who went to that store in college are now our most loyal customers."

At the downtown location, leased from Nick Sibley for two years with renewal options for up to eight years, McSalty's would seat about 44, Dunlop said. The Jefferson Avenue site had formerly housed Springfield's oldest Dairy Queen franchise, before its owners retired in 2012, according to Springfield Business Journal archives.

She said the restaurant would initially employ about 11 and likely would boost that number to 20. The restaurant also will provide delivery service to college campuses and the immediate downtown area.[[In-content Ad]]
