New pizza concept set to launch at 14 Mill Market

A pair of siblings behind a local Sno Biz franchise are bringing a new eatery to 14 Mill Market in Nixa.

Classics Pizza & Subs is expected to open by the middle of this month at the food hall, said Kyler Pearce, who owns the business with his sister, Carrington Shockley. It will replace D’Vine Delicatessen & Wine, which exited the Nixa venue in December.

Pearce said they will open their new venture under Sno Biz Plus LLC. The siblings operate six locations as well as a mobile trailer of the shaved ice franchise, including one inside 14 Mill Market. The duo purchased the Springfield franchise from Hurts Donut Co. founders Tim and Kas Clegg in 2019, according to Springfield Business Journal archives.

“We’re both very passionate about food,” Pearce said of himself and his sister. “We saw an opportunity here. Something that’s missing here is more like family-style food options – having something that’s shareable but also having some stuff for lunch that we thought was missing as well, like with subs, to-go pastas and things like that. We saw the need, looked at options and we just thought it would be a good concept to test out.”

The owners say the menu for Classics Pizza & Subs is still being finalized but will include pizza, hot and cold sub sandwiches and likely wings and baked pastas. The roster of subs will include meatball, chicken parmesan, buffalo chicken and club sandwiches.

“We’re going to do a couple of different options,” Pearce said of the pizzas. “We’re going to do St. Louis-style, which is something we’ve noticed is missing in the Nixa area. We’re also looking at traditional, either a hand-tossed or pan option as well. They will all be made to order.”

Startup costs will be around $40,000, he said, declining to disclose their one-year lease rate with 14 Mill owners Rich and Leah Callahan.

The siblings plan to initially work at the eatery, which will employ a staff of around 10, Pearce said.

“We want to be pretty hands-on for the first few months we’re open,” Shockley said. “That requires being there quite a bit just to get everything established and make sure everything is working the way that we want it to run.”

The arrival of Classics Pizza & Subs comes on the heels of other recent announcements involving vendor turnover at 14 Mill Market. Owners of London Calling Pasty Co. announced at the start of December their plan to relocate its Battlefield Mall store to the food hall this month, according to past reporting. That’s in addition to The Gochu Handcrafted Korean BBQ Bowl, which also plans to open this month at 14 Mill. London Calling is replacing Pie Paradiso, while The Gochu is taking the spot formerly occupied by Queen City Soul Kitchen.
