A sushi restaurant is holding its grand opening today at the mixed-use Galloway Creek development.
Niji Sushi Bar & Grill LLC started lunch at 11 a.m., an employee busy with the opening said, referring questions to the owner. Quyet Trieu, listed as the owner in Missouri secretary of state filings, was not available for comment by deadline.
The restaurant, 3938 S. Lone Pine Ave., Ste. 100-B, in the eclectic Galloway Village neighborhood has a menu that includes bento boxes, ramen and a line of sushi products, including the Jurassic Park Roll featuring shrimp, crab and eel, and the Cherry Blossom Roll with tuna and yellowtail, according to its website.
"Health and good food is key ... to make people happy and feel wonderful," a post yesterday on Niji Sushi Bar & Grill's Facebook page reads, pointing to the Friday opening.
Niji is the Japanese word for rainbow, according to translator websites.
In Galloway Creek, Niji Sushi Bar & Grill joins commercial tenants including Culture Flock, Pure Hot Yoga and Entrust Property Solutions. Galloway Creek Development Group, owned by Brent Brown of Entrust and other business partners, opened the $7.7 million, 46,000-square-foot development in 2018.
Utah-based gourmet cookie chain Crumbl Cookies opened its first Springfield shop; interior design business Branson Upstaging LLC relocated; and Lauren Ashley Dance Center LLC added a second location.
