Vantage Rooftop Lounge and Conservatory
The 48-guest room expansion of Hotel Vandivort, dubbed V2, features the fifth-story Vantage Rooftop Lounge and Conservatory that opened Sept. 24. The 20-employee lounge, at 260 E. McDaniel St., comprises 5,500 square feet of interior and exterior space. The Lamar Johnson Collaborative LLC designed the $9.75 million second phase of the hotel, co-owned by husband and wife John and Karen McQueary and his brother Billy. Tessa LeRoy, the hotel’s director of sales and marketing, declined to disclose startup costs for the lounge, which features interior space decorated in a European art deco style and a grand skylight. LeRoy said the outside rooftop has a mix of tables and soft seating, including private cabanas. The drink menu features wine, beer and cocktails, with most priced at $4-$10 per glass. Sharable food plates, such as smoked trout dip, also are available, in the $10-$12 range.

Tonik Sweetwater Saloon
Downtown Springfield got a new healthy dining option with the Sept. 19 opening of Tonik Sweetwater Saloon. Located two doors down from Japanese restaurant Kai, Tonik is in nearly 4,000 square feet at 310 S. Campbell Ave. Co-owners Nick Verheyen and Todd Smiley both have worked in construction, but the eatery marks their debut in the food and beverage industry. Verheyen said he still maintains his 17-year-old Verheyen Construction LLC. Organized under Spry Health & Juice Bar LLC, Tonik Sweetwater Saloon serves smoothie and juice drinks, as well as health-focused food options, including avocado toast, acai bowls, fruit salad and pita wraps with prices at $8 or less. Verheyen said beer and wine also is planned, once a liquor license is secured. The two invested nearly $60,000 and signed a three-year lease for an undisclosed rate with Tillman Redevelopment LLC. The owners also plan to open Tonik’s Sweetwater Yoga Studio on Oct. 7 within the building.

Smoking accessories – ranging roughly $4-$30, according to its website – also are sold, along with bohemian clothing and jewelry. Shane Stout said he and his wife have operated Springfield Discount Liquor, 1423 E. Kearney St., for the past five years and plan to run Bohemian Smoke Shop simultaneously. They are on a two-year lease for undisclosed terms. He said startup costs were roughly $25,000 to convert the 1,600-square-foot former Domino’s Pizza.
