Roots Coffee Bar
Stephen and Britny Washburn in January took over the former Skybox Too space at 1645 W. Republic Road, Ste. G, in Remington’s Corner shopping center, and opened Roots Coffee Bar on July 3. Stephen Washburn said his wife is primarily in charge of the business as he continues operations at Early Bird Breakfast Pub. Around $50,000 was spent on startup costs, he said, which took several months for the parents of three to complete. The shop is on a one-year lease for an undisclosed rate with building owner David Williams. Described as a fast-casual coffee bar, Washburn said Roots offers breakfast and lunch options, along with a full cocktail list. Coffee drinks, sourced from Springfield-based Kingdom Coffee and PT’s Coffee Roasting Co. in Kansas, run $2.50-$5, with sandwiches priced $5-$6. Ten employees work in the 3,000-square-foot shop. “We just always wanted a coffee shop like this,” he said.

It’s the ninth location in Missouri, one of 34 states where the retailer operates, said Discount Tire spokeswoman Mary Newsome. The company expects to surpass 1,000 stores this year. With an estimated construction cost of $950,000, according to the building permit on file with the city, the 7,000-square-foot shop has six service bays and a 1,300-square-foot showroom. The land is owned by Discount Tire affiliate Halle Properties LLC. The retailer sells over 60 tire brands, including Michelin, Goodyear and Pirelli, and as many wheel brands. Discount Tire first entered the Springfield market in December 2016 at 3670 S. Glenstone Ave.
