Jimmy’s Egg slated for shuttered Pizza Inn

Oklahoma City-based breakfast and lunch chain Jimmy’s Egg is opening its third Springfield restaurant in as many years.

The company is targeting an August launch for its latest restaurant at 2440 N. Kansas Expressway, the site of one of two Pizza Inn locations in town that closed in March.

Jimmy’s Egg President Kevin Burke said the company has kept a close eye on the area of town just north of Kearney Street, where he said there’s not a lot of turnover.

“It’s a very tight market point,” he said. “We got lucky on this one.”

Todd Chambers of Chambers Real Estate Services LLC represented Jimmy’s Egg in leasing the 3,500-square-foot property owned by the Charles A. Floyd Trust for undisclosed terms. The restaurant will employ 20, the average for Jimmy’s Egg restaurants, Burke said.

The restaurant chain plans to invest roughly $500,000 renovating the property’s exterior and interior.

“The building has good bones, but it’ll look completely different when we’re done with it,” Burke said.

Jimmy’s Egg opened its first Springfield restaurant in February 2014 at 3315 E. Battlefield Road, followed by a location at 3837 S. Campbell Ave. in early 2016.

All of the company’s Springfield operations have been converted from former uses. The Battlefield Road space previously was a tourist information center operated by the Springfield Convention & Visitors Bureau, and the Campbell restaurant was a Panera Bread.

With the new restaurant, Jimmy’s Egg will operate four in Missouri, including a location in Joplin. Burke said the company has plans to look at Republic and Nixa, as well as other Missouri cities along Interstate 44, such as Lebanon and Rolla. The company has 57 eateries in nine states.
