I Love Tacos Taqueria to add brick-and-mortar locale

Food truck venture I Love Tacos Taqueria is expanding with a brick-and-mortar restaurant.

The company is targeting a May opening at 2724 E. Chestnut Expressway in Cedar Brook Corners, said Yeni Vasquez, who owns the business with husband Aldo.

"We decided to open this place because we needed a bigger kitchen for our food truck businesses, and this place was perfect for that," Vasquez said. "The seating area was a big plus, so we just said, 'Why not open a brick and mortar?'"

I Love Tacos Taqueria signed on for 1,500 square feet in the shopping center, located down the street from O’Reilly Automotive Inc.’s headquarters. Vasquez declined to disclose startup costs and lease terms.

The company's primary food truck is located across the street from Pilot Flying J on West Chestnut Expressway, and I Love Tacos trucks are often on-site at events, breweries and businesses.

I Love Tacos Taqueria serves up a menu of tacos, burritos, quesadillas, tortas, sopes and tamales.
