Galloway Village adds a coffee shop

Galloway Village will soon be buzzing when its only coffee shop opens tomorrow.

After months of renovation and years of dreaming, husband-and-wife Justin and Allicyn Hollis partnered on Springtown Coffee Co. at 3541 S. Lone Pine Ave., across from Sequiota Park. It’s the couple’s first business venture.

“It’s been a whirlwind,” Allicyn said. “It’s been one of the most stressful and one of the most rewarding things we’ve ever done.”

The menu features classic and specialty espresso and coffee drinks, as well as smoothie and pastries from Gardener's Orchard and Bakery LLC in Brighton. Allicyn said she plans to roll out smoothie bowls in the next few months.

Located in a multitenant center, the 50-seat, 900-square-foot coffee shop sits between Trim Salon and Precious K9s, with 2B Well LLC occupying the top floor of the building. It’s open seven days a week from 7 a.m. to 7 p.m. Allicyn declined to disclose startup costs or lease terms. She previously estimated a $125,000 investment in the venture.

Two couples have joined the Hollises as owners and partners: Justin’s brother Brennan Hollis and his wife Megan, as well as nearby 4 by 4 Brewing Co. LLC co-owners Derek and Danielle Shimeall. Springtown Coffee is across the parking lot from 4 by 4.

Justin and Allicyn Hollis don't have prior experience with coffee, Allicyn said, but it was a personal passion. She has a bachelor’s degree in social work and previously worked at Burrell Behavioral Health, while Justin most recently was employed as an engineer for SRC Electrical. Both are now working full time at Springtown, Allicyn said, adding she’ll continue her part-time job behind the bar at 4 by 4 Brewing.

To hone their skills, she said the couple have made trips to area coffee shops, including Onyx Coffee Lab in Rogers, Arkansas, and Copper Canyon Coffee Roasters in Battlefield, which is supplying coffee beans for the shop.

“It’s definitely something that we dove into to learn the craft,” she said.
