Bolivar’s dining scene is about to expand as Flat Creek plans to open its newest eatery next month.
The restaurant venture, which also operates locations in Cape Fair and Republic, announced via Facebook a March 7 opening date for its $2.8 million Bolivar eatery at 730 E. Aldrich St.
Thane Kifer and Drew Kifer of Bolivar-based Pinecone Holdings LLC are the lead developers for the newest Flat Creek in Polk County, and another in Webb City, according to past Springfield Business Journal reporting. Both buildings are owned by a consortium of investors and leased to Flat Creek owner-operators Alan Kram and Josh Rasmussen.
Rhodes Construction Co. LLC is general contractor for the 8,814-square-foot restaurant in Bolivar, which was designed by H Design Group LLC.
Kram said it will seat close to 280 with plenty of parking for vehicles, RVs and boats, according to past reporting. Additionally, he said the kitchen will be large enough to allow the scratch preparation of items such as tartar sauce, salad dressings, hush puppies and hand-formed burgers. Its Bolivar menu will mirror Flat Creek’s other locations and include catfish, fried chicken, hand-cut steaks, small-batch barbecue and sandwiches.
Flat Creek officials also said on Facebook the company is looking toward a late April or early May grand opening for its 9,500-square-foot restaurant in Webb City.
Utah-based gourmet cookie chain Crumbl Cookies opened its first Springfield shop; interior design business Branson Upstaging LLC relocated; and Lauren Ashley Dance Center LLC added a second location.
