Cheesy food truck opens in Springfield

A new venture called Gooey's Grilled Cheese LLC launched this week at the SGF Mobile Food Park, 836 N. Glenstone Ave.

Owner Demetrius Wilson said the food truck opened to high demand on July 24.

“We thought we had way more than enough food,” he said. “We didn’t run out of everything, but we ran out of a couple things.”

Wilson said he came up with the idea about two and a half years ago but didn’t have the funding to get the concept off the ground. He acknowledged gourmet grilled cheese shop Druff's beat him to market with its downtown opening in 2016.

“The more the merrier,” he said. “I was looking for a different kind of food truck to do.”

Wilson said he moved forward on the plans when he and his girlfriend began expecting a child. They invested $30,000, comprising a small-business loan and savings, to start Gooey's Grilled Cheese.

Menu items, which include classic grilled cheese, the BBQ Mac Stack, The Popper and a rainbow-cheese sandwich, are priced $3-$7. He said the BBQ Mac Stack and The Popper, which are the most expensive menu items, are the best sellers so far.

Wilson said Gooey's Grilled Cheese also has booked events in August at Mid-Missouri Bank, Ridgecrest Baptist Church and Ozarks Technical Community College.

The SGF Mobile Food Park had been home to grilled cheese food truck Two Fish Five Loaves before the operators relocated to the Kansas City market in 2016, according to its Facebook page.

Current vendors in the food park include Twisted Mike’s and London Calling. In 2014, Springfield Business Journal reported the food park had seven regular vendors.
