The Big Biscuit plans 2 Springfield restaurants

The Big Biscuit, an Overland Park, Kansas-based breakfast and lunch restaurant chain, plans to enter the Springfield market this spring.

Jason Paetzold, a partner in the company, said the first restaurant at 2920 S. Glenstone Ave., in Brentwood South, is slated to open in April, followed by an early May launch at 3620 S. Campbell Ave. in Kickapoo Corners.

“We plan on growing and opening even more locations in the market,” he said. “It’s a great restaurant town.”

Paetzold said The Big Biscuit has added 12 restaurants in the past seven years, after starting with two in Blue Springs and Independence in 2000. It currently has 14 locations in the greater Kansas City area. The Kansas City Star recently reported The Big Biscuit also has plans to launch a store in the Westport neighborhood of Kansas City this summer and another in Topeka, Kansas, this fall.

“As far as expansion goes, we specifically really saw Springfield as an incredible market that really matched and resonated with what we offer as a concept,” said Paetzold, who’s familiar with the market having attended Southwest Baptist University.

Declining to disclose lease terms for the Springfield restaurants, he said infill work in the Brentwood Center already has begun and that contractors should start within 30 days in Kickapoo Corners. Building permits on file with the city list a declared valuation of $140,000 for the Brentwood restaurant. A declared valuation is not yet listed for the Kickapoo Corners site.

Paetzold said The Big Biscuit’s southern-inspired menu includes biscuits and gravy, plate-sized pancakes, omelets, chicken and waffles and a “brunch burger” with over-easy egg, hash browns and bacon.
